Home Canning Can Result In More
Nutritious, Economical Foods
Home canned foods can help you
serve more nutritious, better
balanced meals to your family the
year ’round. And they can help you
save money on your food bill
especially if you grow the fruits
and vegetables yourself or find
good buys on these fresh products.
And home canned foods make good
gifts for people who don’t can that
particular product or don’t can at
all.
To save money by canning foods
at home it’s essential that canned
foods do not spoil for any reason.
When a jar of food spoils, you not
only lose the food, but the cost of
the lid, fuel and the time and
energy you put into canning that
food.
To eliminate food spoilage you
need to do several things: follow
carefully and exactly, modem
directions for canning, including
recommended headspace, style of
pack and ingredients; process the
food by the method recommended
for the time indicated in a modem
timetable.
Canning won’t improve the
quality of food, but the quality of
foods you can at home may be
better or less gobd than com
mercially canned foods you buy.
The key to the quality of the food
you can is based on the variety and
maturity of the food you select,
timing, and methods of canning
you practice. Use a reliable up-to
date canning guide.
Satisfactions from home canning
are great. Shelves full of sparkling
jewel-like jars of fruits and
vegetables can be a joy all fall and
winter. You can take as much
pride in serving a quality home
canned food as you would in ser
ving a special recipe such as a
baked product that you prepared

sharing your home canned foods
with shut-in friends and others who
are unable to can. Home canned
foods make good gifts for special
occasions or as hostess gifts when
you are entertained.
If you have a desire to be creative
in food preparation
that’s great. But don’t exercise
that creative urge by the way you
can foods at home. Instead, use
that creativity when you serve a
meal and stick to the recom
mended procedures of canning
foods at home. This means
following exactly, each step of
modem, up-to-date canning in
structions. Only then will you reap
all the benefits from home can
ning.
Certain Jar Lid Brands Cause
“Problems”
While shopping in your local
supermarket, you find boxes
canning lids on special, but you
don’t recognize the brand name.
Are they good to use? The answer
is NO!
Only three brands of jar lids are
now marketed in the East
Bemardin, Ball and Kerr. Other
companies that manufactured lids
several years ago have either gone
out of business or are no longer
producing lids. Lids from these
companies still on store shelves
are old and thus not good to use.
That’s because gaskets on lids
more than three to five years old
often fail during canning, so even if
you buy them at a bargain price,
they may not be a bargain in use.
The three remaining companies,
Ball, Bemardin and Kerr,
manufacture lids each year. When
you see these lids on supermarket
shelves, you can be sure they are
newer and better to use.
