EGG-SPINACH SALAD
lib fresh spinach
1/2 c. salad oil
1/4 c. sugar
2 T. vinegar
11 finely grated onion
l/2tsalt
1/41. dry mustard
0 slices bacon, cooked until crisp,
drained and crumbled
6 hard-cooked eggs, chopped
Wash spinach thoroughly in
lukewarm water; drain. Chill to
crisp. Combine oil, sugar, vinegar,
onion, salt and mustard. Beat or
blend in blender until dressing
becomes thick and syrupy and
sugar is thoroughly dissolved.
Tear spinach into bite-size por
tions; place in large salad bowl.
Add bacon and eggs. Pour dressing
over all; let stand about 1/2 hour.
Toss to thoroughly mix salad.

SUPPER IN A SKILLET
3/4 c. uncooked rice
1 can condensed cream of celery
soup, undiluted
3/4 c. water
IT. butter
1 pkg. frozen peas, separated
1 can sliced mushrooms, drained
6 eggs
1/2 c. shredded Swiss cheese
parsley, optional
In large fry pan or skillet,
combine rice, soup, water and
butter. Cover and bring to boil.
Reduce beat to simmering. Sim
mer covered 5 minutes. Stir in
frozen peas and simmer covered
another 5 minutes. Stir in
mushrooms. Make 6 indentations
in rice mixture. Break an egg into
each indentation. Cover and
continue codling over low *to
medium heat until eggs are almost
set, about 3 to 5 minutes. Sprinkle
with cheese. Cover and cook until
eggs are desired degree of
doneness, about 5 to 7 minutes.
Garnish with parsley, if desired.

EGG-CHEESE TUNA TIMBALES
1 can evaporated milk
3 eggs, slightly beaten
1 c. shredded Swiss cheese
1 can tuna, drained and flaked
It. grated onion
1/41. salt
1/41. basil
1/81. ground red pepper
Cheese sauce:
2/3 c. evaporated milk
1 c. shredded Cheddar cheese
Preheat oven to 325 degrees. For
timbales, heat 1 cup of the
evaporated milk in a medium
sized saucepan to just simmering.
Remove from heat and stir a small
amount of milk into eggs. Return
all to saucepan. Stir in Swiss
cheese. Return to low heat to finish
melting cheese. Remove from beat
and stir in tuna, onion, salt, basil
and red pepper. Divide mixture
evenly between 6 buttered 5-oz.
custard cups. Place cups in 13x9-
inch baking pan.
Fill with hot water to within 1-
inch to top of cups. Bake 25 to 30
minutes or until a knife inserted
near center comes out clean.
Remove custard cups from hot
water. Let stand 5 minutes.
Meanwhile, for cheese sauce, heat
remaining evaporated milk, 2/3
cup, in a small saucepan just to
simmering. Remove from heat and
stir in Cheddar cheese until
melted. If necessary, return to low
heat to finish melting cheese. Do
not boil. To serve, unmold timbales
onto warm serving plate. Spoon
sauce over each. Serve im
mediately.

CAMP HILL - On December 21,
board members of the Advertising
and Promotion Agency/Middle
Atlantic Milk Marketing Area met
in Arlington, Virginia, at the
Maryland and Virginia Milk
Producers Association offices. The
special congregation was held in
order to view, for the first time, the
all new television commercial
which will highlight the Agency’s
1963 advertising and promotional
campaign.
The 30 second spot carries the
theme: “Milk. It’s Fitness, You
