BAKED SALSIFY
2 c. cooked salsify
2 eggs
3 c. crushed soda crackers
2 T. butter
11/21. salt
1/81. pepper
3c. milk
Clean salsify and cut in small
pieces. Cook in salt water till
tender. Place a layer of crackers in
a greased baking dish. Add a layer
of salsify and sprinkle with salt
and pepper. Continue to alternate
layers until contents are used up,
ending with crackers. Beat eggs,
add milk. Pour over ingredients.
Dot with butter. Bake at 350
degrees for 43 minutes.
To store;
Temperature, cold 32 to 40
degrees. Moisture 90 to 95 percent.
Storage period 3 to 6 months.
Select larger but smooth salsify.
Can be stored in outdoor pits, cold
cellar in covered cracks, discarded
milk cans, or similar containers
with lid on or covered with moist
sand or soil. Salsify is improved by
freezing but may be stored for
convenience.
