One tale has it that Uncle Sam was origi
nally associated with the Army back in the
War of 1812. Meat was then packed in bar
rels for the Army. The initials "E.A.-U.S."
were stamped on the barrels, standing for Elbert Anderson, the name of
the packer, and for the United States. One soldier asked what the initials
meant and was told in jest they stood for Elbert Anderson and his Uncle
Sam. It caught on. Uncle Sam was first featured in cartoons in 1830, but
he had no goatee in Lincoln's time.
