According to Vicky Waas, egg
marketing specialist at PDA, a
nest run egg is an ungraded, shell
egg which may be sold to egg
grading or packing plants, but not
to bakeries, food packing plants or
retail stores. Nest run eggs are as
the name suggests - eggs right
from the nest or cage that have not
yet been run through washing nor
have been graded. Once they are
packaged and graded, eggs are no
longer considered “nest run eggs.”
