The process claims that the shelf
life, with no refrigeration, can be
extended to eight months. The
processing cost is 20 cents per
quart more than the conventional
high temperature short tune
procedure. This processing cost
difference will discourage the
usual milk consumer for every day
use.
Dairymen, Inc., the large
cooperative headquartered in
Louisville, KY, is building a new
plant for pr&essing and packaging
a line of ultra-high products.

A west coast firm. Valley Fresh,
has been providing the long-life
product to the military and in
stitutions and has announced its
intention to enter supermarkets
shortly.
Don’t look for aseptic milk to
capture a significant share ot the
fluid market in the next few years.
Taste tests of the product show
mixed results when aseptic is
compared to fresh whole milk on a
flavor basis. Even if flavor is a
constraint today, it is likely that
the problem will be worked out in
time.
At least a halt dozen firms are
scheduled to take steps leading to
the aseptic milk packaging during
1981.

Maryland Agricultural Forum held Nov. 4 on
