Retailing ideas increase
pork's convenience
LANCASTER New ways of
packaging and merchandising
pork in your supermarket’s meat
department mean increased
convenience, variety and possible
savings for the consumer.
Until recently, there was a lack
of new techniques in retailing pork,
says University of Delaware ex
tension home economist Sally
Foulke. Now, several ideas are
gaining popularity with consumers
and the trade.
Fresh ground pork is one new
product being sold in some parts of
the country and its availability is
expanding, she says. Ground pork,
unlike sausage, has no added
seasonings and is 70 to 80 percent
lean.
It wasn’t until February of this
year that a full-scale test of the
product was made in a major
metropolitan market. Denver
consumers reacted favorably and
indicated the concept is a viable
marketing opportunity for pork.
With over 50 percent of all beef
marketed in ground form, the
potential tonnage for ground pork
products could be awesome.
Another major development that
could ultimately affect how
customers buy pork is vacuum
packing. Closely trimmed,

driven out of the package.
“Vacuum packaging gives the
consumer a fresher product with a
longer shelf life. And the products
are packed under very careful
quality control,” says Foulke.
Consumers may notice a dif
ference in the color of vacuum
packed pork, she notes. “Because
there’s no oxygen present in the
package, the color becomes more
of a dull purple rather than the
bright pink people are used to. But
when die package is opened and
oxygen contacts the meat, the
bloom returns.”
Vacuum-packed, boneless cuts
are easy to prepare. Many com
panies provide recipe ideas right
on the package. And, boneless cuts
are easy to carve and serve.
There’s no waste because the
products have so little fat and no
bones, so every bit of the meat is
usable.
“Now we’re seeing larger cuts,
such as a whole picnic ham or half a
loin, in vacuum packaging. In the
future, I think we’ll see individual
cuts, such as pork chops and pork
blade steaks, done this way,”
Foulke says. A process for vacuum
packaging such cuts is still in the
experimental stage.
