OS— Lancaster Farming, Saturday, April 18,1981 Lamb for Easter (Continued from Page C 6) LAMB ‘N CORN CHOWDER 2 T. butter 1 pound ground lamb 4 medium onions, chopped 4 medium potatoes, diced IT. salt 1/81. pepper 3 c. water 1 quart of milk 112 ounce can of whole kernel com Melt butter Add lamb and onions and cook until lightly browned Pour off excess fat, if any. Add the potatoes, salt, pepper and water Cook covered over low heat about 15 minutes, or until potatoes are tender Add the milk and com; mix well Heat to ser ving temperature LAMB RIBLETS HAWAIIAN 5 pounds of lamb nblets salt and pepper to taste 3/4 c catsup 1/2 c sweetened pineapple juice 3 T. honey Parboil lamb nblets in boiling, salted water 45 minutes or until tender Dram well and trim off excess fat; sprinkle lamb lightly with salt and pepper Mix catsup, pineapple juice and honey in a saucepan; simmer about 5 minutes Brush nblets on both sides with tomato sauce Grill nblets until browned on both sides, brushing frequently with sauce ELECTRIC SLOW COOKER LAMB STEW 21/2 pounds boned leg of lamb, cut into 1-mch cubes 11/21 salt 1/81 ground pepper 12 small white omons, peeled 6 medium carrots 6 new potatoes 1 c. chicken bouillon Ipkg frozen peas Arrange lamb in bottom of slow cooker; then sprinkle with salt and pepper Add onions, carrots and potatoes Pour bouillon over all Cover and cook on low, 61/2 hours, then turn to high, add peas, cover and cook 1 hour more Remove fat from juices and adjust seasonings Answers to Cook’s Question Comer are as follows SHAKE AND BAKE MIX 4 cups fine dry bread or cracker crumbs 1/2 c flour 4t salt 4t sugar 4t omon powder 11. garlic powder IT. paprika Mix all together and add in 1/2 cup shortening until well mixed Good for chicken or pork For pork, add a little sage Bake at 400 degrees for 40 to 50 minutes. Edna Perkins, Ulysses SHAKE AND BAKE 1 c. flour 2t salt It pepper 1/2 c cracker crumbs 11 herbs (thyme, oregano, basil or a mixture) Combine and stir together Use half the mixture for three pounds of chicken or pork Reserve remainder in a tightly covered container Moisten the meat with milk or water Shake with mix in paper bag' Bake in greased shallow pan at 350 degrees for 45 minutes to one hour Mildred Miller, Hershey JELLY ROLL 3 eggs 1c sugar 3T water or milk 11/3 c cake flour 1/21 salt 11/21 baking powder grated rind of lemon Beat eggs until thick and lemon colored Add sifted sugar gradually and continue beating. Add liquid and lemon rind and beat Sift flour, measure and add salt and baking powder Sift again. Sift slowly over egg mixture, folding in with wire whisk Cover a shallow-sided, flat pan with waxed paper Dough shouldn’t be over 1/4 inch thick in pan Bake at 400 degrees for 12 to 14 minutes Turn out on damp cloth that has been sprinkled with powdered sugar Remove waxed paper and trim off hard crusts Roll and cool a little Unroll and spread lemon filling and roll again Lemon Filling 1/3c cornstarch 1c sugar 11/4 c cold water 2 egg yolks slightly beaten dash of salt 2/4 c lemon juice It grated lemon rind 1T butter Blend com starch and sugar in a one quart saucepan 'Stir m cold water gradually and cook over medium heat until mixture boils and thickens Stir constantly to keep from sticking Add some of the hot mixture to yolks, stir well and return to pan and cook and stir 2 more minutes Remove from heat, add remaining ingredients and stir until well blended Cool thoroughly before spreading on roll Anna Martin, East Earl &a/wi H Societies I Lancaster Co, Society 10 Farm Women 10 entertained members of Society 33 at the Refton Fire Hall recently Twenty three members attended Miss Caroline Miller, Lancaster, displayed her doll collection and presented a lecture about them Members decided to support 4-H for their county project The May meeting will be held at Denwood Nursery where flower arranging will be discussed Lancaster Co, Society 13 Farm Women 13 met recently at the home of Mrs Irvin Leaman Eighteen members answered roll call by giving their favorite hymn The county convention was announced for November 7 at the Farm and Home Center The program for the evening was by Dottie Leaman who gave a demonstration on how to make Easter bunnies out of wash clothes Only thru low overhead and hard work can we offer the lowest prices on quality merchandise in Central Penna. Society 14 Lancaster Farm Women 14 spent Wednesday, April 8, as Local Ap preciation Day Members visited Jays’ Advertising on Ronks Road, Witmer’s Greenhouse on Green field Road, and Weaver’s Egg Processing Plant in Greenfield Industrial Park. Members then toured and learned about Racquetball and Nautilus at the Greenfield Court Club. The final stop was at Goodwill Industries in Lancaster on Plum Street. Jacquie Beyer, head of public relations took Society 14 on a tour and explained their training and working program for the handicapped. On May 14 Society 21 will hold a mother-daughter banquet at the Robert Fulton Inn.
