MANNS CHOICE - Harold and
Dons Wertz of Manns Choice
operate a mink farm
Twenty-four years ago, Dons
and Harold Wertz started with four
bred mink as a hobby. Little did
they know that it would lead them
into raising mink for a living
Farming at home, Harold, a
dairy farmer, decided they en
joyed raising mink more and sold
their dairy herd to try their hand at
it full time
Mating takes place from
February to March and is the only
time mink make much noise, both
sexes purr They usually have
from one to ten kits in a litter, and
bear their young in May and are
ready to pelt in December
Mrs Wertz keeps up-to-date
records, and can tell you how
many males or females a mink
produced, and who their mother
and grandmother are She can tell

MACARONI SALAD
2 c uncooked macaroni
6 hard cooked eggs
1/3 c grated carrots
1/3 c chopped onions
1/3 c chopped celery
Cook macaroni per directions on
package Combine all ingredients
Dressing:
11/3 c sugar
1/4 c. flour
1/2 c vinegar
1/4 c prepard mustard
11/4 c water
salt and pepper
Cook until clear (about 10
minutes) Cool When cool, add 1
1/2 c mayonnaise. Add a little
celery seed, if desired Pour over
macaroni mixture and mix well.
Sprinkle with paprika and let stand
overnight m refrigerator.

preferred for collars, females are
generally used in coats (A coat
requires about 50 pelts)

Wertz said, 'Mink now fits into the
casual scene ”
Mink comes in 18 basic colors
and thirty-two shades
Beside the mink farm, the
Wertzs’ own and operate a travel
trailer campground and Mr Wertz
is assistant mail carrier for Manns
Choice
Active in PFA, Harold is a
board member and Dons serves on
the Women s Committee
The Wertz have four children,
Dennis 29, Dianna 26, Charles 20,
and Troy 16 Charles and IT oy both
help out on the farm

1 gallon milk (that has the cream
skimmed off the top and which is
preferably from a cow who never
has been treated with anitbiotics
since antibiotic residue can
deactivate yogurt culture)
8 T. powdered milk
1-8 ounce container plain yogurt or
1 cup yogurt from previous batch -
“starter culture”
Bring starter culture to room
temperature. Mix powdered milk
with liquid milk Bring to 180
degrees stirring occassionaly Cool
to 110 to 115 degrees Thin starter
with 4 T cooled milk Add to milk,
stir to mix.
Either keep in pot or pour into
mason jars Cover Keep warm
and undisturbed 3 hours or more
until desired consistency is
reached. Regngerate.
Flavor with fruit purees Honey,
sugar or anything you like

completed an official-DHIR actual
production record of 17980 pounds
of milk and 866 pounds of butterfat,
m 305 days two times a day
milking, according to The
American Guernsey Cattle Club.
The testing was supervised by
Pennsylvania State University,
