ROAST RABBIT WITH MUSTARD
1 rabbit, 2to 2% pounds, cut mto serving pieces (see below
for instructions)
4 tablespoons butter
Salt and freshly ground pepper to taste
2 tablespoons imported mustard such as Dijon or
Dusseldorf
% cup plus 2 teaspoons dry white wine
2 bay leaves
Vz teaspoon dried thyme
Vz cup heavy cream
If the rabbit is frozen, let it defrost overnight in the
refrigerator. Preheat the oven to 450 degrees.
Heat the butter in a shallow roasting pan that will hold
the rabbit pieces comfortably in one layer. Add the rabbit
pieces and turn them m the butter. Sprinkle with salt and
pepper to taste. Place the rabbit in the oven and bake five
minutes.
Turn the pieces of rabbit and continue baking five
minutes. Blend the mustard and two teaspoons of wine.
Brush the rabbit on both sides with the mustard and
wine mixture.
Bake five minutes. Turn the rabbit pieces and return to
the oven. Add the garlic, bay leaves, thyme and
remaining half cup of wine. Cover closely with foil.
Reduce the oven heat to 375 degrees. Continue baking,
basting often, about 45 minutes or until tender.
Add the cream and baste the rabbit pieces. Cover with
foil and bake 15 minutes longer. Serve with noodles.
Makes 4 to 6 servings.
