For evening entertainment the Meyers family make
popcorn or soft pretzels and sit in their family room and
watch TV together.
If farm family survival is what the Meyers family is all
about, they seem to be piling up the right ingredients.
After spending time with them it appears that they do
indeed benefit from their work. There extra work, load
resulting from doing things by themselvs, seems to be
-'well worth their effort and savings.
Not only have they benefitted, but I have too.
I got to taste one of Doris’ golden brown homemade soft
pretzels. Here is her recipe.
Soft pretzels
2 cups warm water
2 pk. dry yeast
Vi cup sugar
2 tsp. salt
V* cup butter

6% - 7Vz cups flour
1 egg yolk
2 tbsp. water
coarse salt
Measure warm water into large warm bowl. Sprinkle
yeast, stir until dissolved, add sugar, 2 tsp. salt, butter,
egg and 3 cups flour. Beat until smooth. Add enough ad
ditional flour to make a stiff dough. Cover bowl tightly
with aluminum foil. Refrigerate 2-24 hours.
Turn dough out onto lightly floured board. Knead in
enough flour to make it workable. Divide in half, put each
half into 16 equal pieces. Roll each piece into pencil

shapes about 20 inches long. Shape into pretzels. Place on
lightly greased baking sheets. Blend together egg yolk
and 2 tbsp. water, brush pretzels with egg yolk mixture.
Sprinkle with coarse salt. Let rise in warm place free
from draft until doubled in bulk about 25 minutes. Bake at
375* for 15 minutes, or until done. Cool on wire racks.
Makes 32 pretzels.
