BUCKWHEAT PANCAKES
2 cups buckwheat flour
% cup wheat flour
1 teaspoon salt
5% teaspoons baking powder
2(4-2% cups milk
1 tablespoon melted shortening
2 tablespoons molasses
1 egg, well-beaten
Mix and sift dry ingredients. Stir in milk. Add the other
ingredients in the order given. Mix well and bake on a hot
griddle
HONEY OATMEAL MUFFINS
% cup milk
% cup vegetable oil
1 egg, beaten
V* cup honey or fructose
1-Vz cup oatmeal, uncooked
1 cup all-purpose flour
% cup raisins
% cup chopped nuts
% cup firmly packed brown sugar
1 tablespoon baking powder
% teaspoon salt
Add milk, oil, egg and honey to remaining combined
ingredients, mixing just until the dry ingredients are
moistened. Fill 12 greased or paper-lined medium-sized
muffin cups % full. Bake in preheated 400* F. oven for IS
IS minutes or until golden brown.

CORNMEAL PANCAKES
1 cup yellow commeal
2 tablespoons sugar
1 teaspoon salt
1 cup boiling water
% cup sifted flour
2 teaspoons baking powder

% cup milk
2 tablespoons butter, melted
Combine commeal, sugar and salt in a large bowl.
Slowly stir in boiling water and cover. Let stand 10
minutes. Sift flour with baking powder and set aside. In a
small bowl, beat egg, milk and butter until smooth. Pour
into commeal batter along with the flour mixture, stirring
quickly until combined. Meanwhile, heat the griddle
slowly. To test, put a drop of cold water onto the griddle.
The water should roll off m drops. Use V* cup of batter for
each pancake. Cook until the bubbles form on surface and
edges become dry. Turn and cook 2 minutes longer or until
nicely browned on the underside. Serve with spicy ap
plesauce.

1 tablespoon butter
Combine m a saucepan and serve warm or cold.

pepper to taste
1 heapmg tablespoon flour
1 cup milk
Put in a bowl m the order given and beat with a rotary
beater. Pour into a heated, greased pan, covered with a
tight lid. Place over medium heat. Cut and turn when
about half done and finish baking.
CHEESY DREAMS
3 English muffins
soft butter
6 slices bacon
Cut the English muffins in half and spread each side
with soft butter. Slice the bacon in half. Broil at 550* F.
with muffins 3 mches from heat until the bacon is light
brown, about 2 minutes. Remove muffins and turn bacon.
Broil bacon 1 minute longer. Top each muffin half with a
thick tomato slice, 2 pieces of bacon and 2 thin slices of
process American cheese. Return the muffins to the
broiler and broil about 1 minute or until the cheese is
melted. Serve at once. Makes 6 servings.
