i Junior Cooking

During this last frantic weekend of freedom from the
school routines, few of our junior cooks are going to be
cooking, so now would be as good a time as any to take the
advice of one young lady who wrote to us. She said she has
started a scrapbook of our junior cooking recipes. So why
not take a few sheets of that new school paper, last year’s
old notebook, and some time and keep these recipes handy
to use on that first snow day home.
2 cups flour
Vh. teaspoons baking soda
1 teaspoon salt
3 eggs
%cupCnscooii
1% cups sugar
1 can apple pie filling
1 teaspoon vanilla
I cup chopped nuts
Beat all ingredients in a large bowl. Pour into a greased
pan and bake at 350° F. for 40 minutes. Use lots of butter
on the top and add sprinkled sugar and cinnamon.

MOM’S FAVORITE COOKIES
2 cups sugar, brown or white
% cup shortening
2 eggs
4 cups flour, unbleached
2 teaspoons soda
1 cup milk
Cream sugar and shortening. Add eggs and mix. Then
add dry ingredients all at once and milk. Mix but do not
overbeat. Bake at 375* F. For something different, add 1
cup raisins or % cup chopped nuts or chocolate chips.

CORN FRITTERS
2 cups fresh corn, grated
2 eggs
V* cup flour
1 teaspoon salt
dash of pepper
1 teaspoon baking powder
2 tablespoons cream
4 tablespoonstat
Add beaten eggs, flour, baking powder, salt and pepper
to the grated corn. Mix thoroughly. Add the cream. Melt
the fat in a frying pan and drop corn mixture by spoonsful
into the hot fat. Brown on both sides. Makes 16-18 flitters.

TOMATO FRITTERS
2 cups cooked tomatoes
2 eggs
1% cups cracker crumbs
1 small onion, minced
% teaspoon salt
dash of pepper
IMt tablespoons sugar
3 tablespoons fat
Beat eggs and add tomatoes, seasoning and cracker
crumbs. Add remaining ingredients and stir until well
blended. Drop mixture from a spoon into hot fat. Fry until
brown on both sides. Serves 6.
HERSHEY’S CHOCOLATE TOWN COOKIES
2 cups shortening
% cup sugar
2 cups brown sugar, firmly packed
2 teaspoons vanilla
4 eggs, well beaten
5% cups flour plus 2 tablespoons
2 teaspoons baking soda
2 teaspoons salt
2 cups chopped nuts
2 cups Hershey’s Semi-Sweet Danbes
Cream shortening, sugar and vanilla. Fold in well
beaten eggs and beat mixture. Sift together flour, soda
and salt. Add sifted dry ingredients to cream mixture and
stir in nuts. Bake in preheated 375* F. about 10 minutes.
