ASPARAGUS SUPREME
4 pounds asparagus
2 tablespoons butter
2 tablespoons flour
2 cups light cream
1 cup diced cooked ham
2 teaspoons lemon juice
teaspoon salt
dash of nutmeg
V« cup shredded Swiss cheese
Wash asparagus and break each stalk as far down as it
snaps easily. Cook covered in 1 mch of boiling water m a
large skillet until tender, 5-8 minutes Meanwhile, prepare
sauce
Melt butter and blend in flour Remove from heat and
stir in cream Return to heat and cook, stirring constantly
until mixture thickens and comes to a boil Add ham,
lemon juice, salt, nutmeg and cheese Heat until cheese
melts Serves 8
GOOEY SHOO FLY PIE
2 cups flour
% cup brown sugar
cup lard or butter
teaspoon nutmeg, optional
1 teaspoon cinnamon, optional
Syrup:
1 cup molasses
% cup brown sugar
2 eggs
1 cup hot water
1 teaspoon soda, dissolved in hot water
2 unbaked pie crusts
Put half of the syrup in each pie crust, then add half of
he crumbs. Bake 10 minutes at 400° F. Reduce to 350°F.
or 50 minutes.

1 cup boiling water
% cup cold water
2 teaspoons lemon juice
1 cup finely shredded lettuce
Vz cup cubed cooked ham
2 ounces sharp processed American cheese cut into % inch
Julienne strips
2 tablespoons thinly sliced radishes
2 teaspoons finely chopped onion
Dissolve the gelatin in the boiling water. Stir in the cold
water and lemon ]iuce Chill until partially set Fold in the
remaining ingredients. Pour gelatin mixture into a 3*6
cup mold Chill until firm Unmold on lettuce lined platter
Makes 3-4 servings
