Many Junior Cookers like variety in their breakfast
drinks. Some favorites are sure to be Vico and Gold Strike
featured in this week’s Junior Cooking Edition. For a

FROZEN CUSTARD
1 quart milk
6-8 egg yolks
1 cup granulated sugar
1 cup brown sugar
% teaspoon salt
Cook these ingredients until thick.
In another pan, heat
1 pint milk
1 cup granulated sugar
1 pkg. clear gelatin soaked m Vz cup cold water
Mix together and add 1 can of evaporated condensed
mdk and two cups of cream.
Place in shallow baking dish and freeze. "

4 eggs
4 cups milk
4 tablespoons lemon juice
% cup cream
1/8 teaspoon nutmeg
1/8 teaspoon salt
% cup granulated sugar
Beat eggs until thick and lemon colored. Add sugar,
nutmeg, and lemon juice. Add ice cold milk and cream.
Beat w.th a rotary beater until frothy.
Yield: 6 large glasses

SPANISH CREAM
1 tablespoon plain gelatin
3 cups milk
% cup granulated sugar
3 eggs, separated
Vt teaspoons salt
1 teaspoon vanilla
Soak gelatin in cold milk for 10 minutes. Add sugar until
it is dissolved. Heat in top of double boiler until milk is
scalded.
Beat egg yolks slightly and add % cup hot milk. Stir this
mixture into remaining milk and cook until slightly
thickened. Stir constantly. Remove from heat and cool
slightly. Fold in stiffly beaten egg whites and vanilla. Chill
until firm.

1 tablespoon honey, optional
Combine egg, juice and honey, it desired. Beat or shake
until well blended. Pour into a tall glass. Serve at once
Variation: Just before seizing add a scoop of orange or
lemon sherbert to Gold Strike.
CHEESY RICE BAKE
1 cube chicken bouillon
cups boiling water
1 cup uncooked long gram nee
1 can cream of chicken soup
1 cup cubed cheese
% cup evaporated milk
V* cup finely chopped pimento
Dissolve bouilUon in boiling water. Add rice and cover.
Cook over low heat 20 to 25 minutes or until rice is tender
and water is absorbed. Take off cover and continue to
cook until rice is dry and fluffy, 4 to 5 minutes.
Add chicken soup, cheese, milk, and pimento. Pour tmto
a IMs quart baking dish. Sprinkle with paprika. Bake in a
350 degrees F oven 25-35 minutes, or until bubbly. Serves
6.

Combine cocoa, sugar and salt. Add water and stir until
well blended. Cook for 5 minutes. Cool and bottle.
Makes 3 cups syrup.
Add tablespoons of syrup to each scalded milk.

Beat eggs until light. Add milk.
Sift flour with baking powder, salt, and sugar. Beat
flour mixture mto egg and milk mixture. Add melted
butter and beat until smooth.
