Mercure, U.S. Assistant Secretary of Agriculture for Rural Development Programs, was the main speaker at the ground breaking ceremony of a mozzarella cheese plant in Waverly, N.Y. on last Saturday. The occasion was another milestone in the history of Eastern Milk Cooperative and the northeast dairy industry. It ws the culmination of a joint ven ture between the 4500 dairy farmer member cooperative and Leprino Foods of Denver, Colorado. Mercure said the joint endeavor would not only benefit dairy farmers in the northeast, but would im prove the lives of of its rural communities through in creased employment and spending ability of its citizens. One of the largest plants of its kind, the Waverly facility is expected to employ over 200 people and handle as much as 1.5 million pounds of milk per day. It will produce approximately 140,000 pounds of mozzarella cheese daily, upon com pletion.
