Home on the Range (Continued from Page 49) CARROT COINS BEEF LOAF 2 pounds ground beef 5 long carrots 16 ounce can of tomatoes 1% teaspoon salt 11/8 teaspoons leaf oregano V* teaspoon pepper Vz teaspoon crushed crackers 2 medium onions, cut in V* inch slices legg 1 small green pepper, cut in thin strips 1 cup sliced celery Vz cup water 1 tablespoon comstasrch Cook carrots (whole) in boiling salted water in large covered frying pan for 15 minutes; drain. Drain tomatoes, reserving juice; cut tomatoes into large pieces. Stir % cup of reserved tomato juice, Vk teaspoons salt, 1 teaspoon oregano and pepper into cracker crumbs in large bowl. Chop enough omon slices to make V* cup. Add ground beef, chopped onion and egg to cracker crumb mixture; mix lightly but thoroughly. Place % of mixture in a 9 x 5 inch loaf pan, pressing into layer in bottom of pan. Place two carrots lengthwise in pan and press into meat mixture. Top with layer of second % of meat mixture. Place one carrot down the center and pi ess into meat. Add remaining meat mixture to form layer and press last two carrots into top, covering them with meat. Bake in a moderate oven (350 Degrees F.) for one hour 15 minutes or until done. For vegetable sauce, add remaining omon slices, green pepper, celery, V* teaspoon salt and /8 teaspoon oregano to boiling water in saucepan. Cover tightly and cook 15 m;inutes or until vegetables are almost tender. Combine cornstarch with remaining reserved tomato juice and pieces of tomatoes. Gradually combine with vegetables and cook three to five minutes, stirring until thickened. Slice meat loaf and serve with begetable sauce. Makes six servings of two slices each. Berks Co, Society 4 Edna Angstadt of Boyertown hosted the January meeting of Berks County Farm Women Society 4. Seven members and one guest were present. - Attending the state con vention as delegates were President Verna Taylor, Elsie Rothenberger and Linda Taylor. The Society donated to the Patty Babel fund. Miss Babel is being treated for a rare blood disease at the John Hopkins Hospital in Baltimore, Md. February 8 will be the next meeting at the home of Mrs. Charles Fink on Fox Hollow Road, Pequea Rl. All members are asked to at tend the meeting because it is to be an unusual surprise meeting.
