EASY PARKER HOUSE ROLLS
6t06V2 cups flour
2 teaspoons salt
y-2. cup granulated sugar
2 packages dry yeast
1 cup butter

In large bowl, combine 2Vi cups flour, salt, sugar, and
yeast; add % cup butter. With mixer al low speed,
gradually pour two cups hot tap water (120 to 130 Degrees
F.) into dry ingredients. Add egg, increase mixer speed to
medium. Beat for two minutes, scraping bowl sides. Beat
in % cup flour or enough to make a thick batter, continue
beating for two minutes, scraping bowl. With spoon, stir in
2Vz cups to make soft dough. Turn dough onto lightly
floured surface and knead until smooth and elastic, about
ten minutes. Shape dough, place in greased bowl, turning
over so tops get greased. Cover with towel, let rise in
warm place (80 to 85 Degrees F.) until double in size,
about V-h. hour. Punch down dough. Knead lightly and let
rest for 15 minutes, covered. Melt % cup butter in pan. On
lightly floured surface, roll out Vz mch thick. With 2% inch
round cutter, cut dough. Dip in melted butter, fold in half.
Cover pan with towel, let rise in warm place until
doubled, about 40 minutes. Preheat oven to 425 Degrees
F., bake for 18 to 20 minutes or until brown.
If one desires to make loaves, just shape and place m
loaf pan and let rise and bake.
