cheese is nearly 4 pounds
with imports in 1977 only .13

Pecormo is, by far, the
leading imported Italian
cheese. Approximately 60
per cent comes from Italy, 19
per cent from Romania, 11
per cent from Greece and
the balance from seven or
eight other countries.
Reggiano and Parmesano
comprise 17.5 per cent of
Italian cheese imports, with
approximately 80 per cent
coming from Argentina and
20 per cent from Italy.
Romano accounts for 15
per cent of the imported
Italian cheeses. Practically
all of it comes from
Argentina.

government reports that, in
1975, we produced and
consumed 457.6 million
pounds of Mozzarella and
81.3 million pounds of
Ricotta.
Per capita consumption of
Cheddar and similar cheeses
is about 9.0 pounds per year.
Cheddar is 75 per cent of this
total. The remaining types
mclude Colby, washed curd,
stirred curd and Monterey
Jack.
Imports are almost in
significant at only .07 pound
per capita per year.
Australia and New Zealand
are the major sources, with

on Saturday, June 24, for all
youth and adults interested
in brushing up on their dairy
judging skills.
Paul and Kathy King, of
Kingway Farms at Delta R 2,
will host the educational
seminar, set to begin at 10
am. and run through mid
afternoon.
Official for the school will
be Dr. James McCaffrey,
well-known area dairy cattle
specialist.

a learning opportunity,”
stresses Kathy King, a
leader of the Junior Holstein
Association. “No one will be
