Now that the New Year is
here, we will be starting
some different recipe
themes which can be found
this section of Lancaster
Farming. Hope you enjoyed
the ones we tried last year.
As always, 1977 had an
overflow of contributions for
the various themes, so this
week as well as next week
we will be cleaning out our
files. Hopefully, this will be
to your benefit
Today’s pot pourri of
recipes are desserts. If you
are a pie lover, there are two
here for you to try as well as
a cake frosting recipe. The
majority, however, are
cakes.
Enjoy. And, don’t forget to
look for our other new recipe
themes.
NO CRUST APPLE
PIE
legg
Vz cup brown sugar
Vz cup white sugar
1 teaspoon vanilla
pinch salt
% cup flour, sifted
1 teaspoon baking powder
2 medium apples - pared,
chopped, or sliced thin
Vz cup walnuts or pecans,
chopped
Beat egg, add remaining
ingredients, and mix well.
Spread all in greased nine
inch pie pan. Bake at 350
degrees F. for 30 minutes.

RUBY APPLE
SAUCE PIE
2 cups applesauce
2 cups whole berry cran
berry sauce
3 tablespoons cornstarch
V* cup cold water
% teaspoon nutmeg
1 teaspoon cinnamon
19-mcb baked pie shell
Combine applesauce and
cranberry sauce. Dissolve
cornstarch in cold water;
add to applesauce mixture
with spices. Cook over low
heat, stirring constantly,
until thickened; cool. Pour
into baked pie shell. Chill.
GLORIFIED GRAHAMS
30 graham cracker squares
Vi cup butter, melted
Vz cup brown sugar
1 cup chopped pecans (or
walnuts)
Line 15 inch x 10 inch x 1
inch jelly roll pan with
graham cracker squares.
Mix butter and brown sugar.
Spoon over graham
crackers. Sprinkle with nuts.
Bake at 350 about 12
minutes. Remove to cooling
rack. Break into rectangles.
BANANA CAKE
2 cups flour
1 teaspoon baking powder
1 teaspoon soda
% teaspoon salt
l-Va cups granulated sugar
% cup shortening
V 2 cup milk, minus 2
tablespoons
1 cup mashed bananas
2 eggs, unbeaten
1 teaspoon vanilla
J /2 cup nuts < optional)
Mix dry ingredients, then
add milk, shortening, eggs,
bananas, and vanilla Mix
well after adding each
ingredient. Pour batter into
two greased and floured 8 by
1% inch layer-cake pans, or
a 13 by 9 by 2 inch baking
pan. Bake layers 30-35
minutes and oblong, 40-45.
CHOCOLATE DATE
CAKE
Vz cup boiling water
1 cup dates
1 teaspoon soda
1-Ms cups shortening
1 cup sugar
2 eggs, beaten
l-% cups flour
teaspoon salt
% teaspoon soda
Mix dates, soda, and
boiling water and let it cool.
Then cream shortening and
sugar well. Add beaten eggs.
Next, add salt and soda to
flour. Combine the date
mixture to the shortening,
sugar, and eggs, and then
add flour. Bake in large pan
at 350 degrees F. for 50
minutes.
Topping:
1 (6 oz) package chocolate
chips
% cup brown sugar
Vz cup walnuts
Topping can be added
before the cake is baked or
about 10 minutes before it is
done.
CANADA TARTS
4 eggs
4 cups brown sugar
4 tablespoons butter
8 tablespoons cold water
2 teaspoons vanilla
Line cupcake pans with
pastry. Fill % full with above
mixture. Bake at 375 degrees
F. for 30 to 45 minutes.

SILVER WHITE
LAYER CAKE
1-Vi cups sifted cake flour
1-Vi cups sugar
2-Vi teaspoons
powder
3 /i teaspoon salt
Vt cup shortening
% cup milk
1-V> teaspoons vanilla
Vi cup milk
Vi cup unbeaten egg whites
Sift together flour, sugar,
baking powder, and salt in
bowl. Add shortening, milk,
and vanilla. Beat with
electric mixer on medium
speed for about two minutes.
Add Vi cup milk and un
beaten egg whites. Beat two
more minutes and pour into
prepared pans. Bake at 350
degree F. for 30 to 35
minutes.

WACKY CAKE
3 cups flour
2cups sugar
1 teaspoon salt
1 teaspoon soda
6 tablespoons cocoa
3 /4 CUP Oil
2 tablespoons vinegar
2 cups water
1 teaspoon vanilla
Mix together flour, sugar,
salt, soda and cocoa in pan.
Make four to six holes in this
mixture and pour in oil,
vinegar, water, and vanilla
Mix pan until smooth. Bake
in 350 degree F oven until
done
