Beef meal
developed
BUENOS AIRES, ARC. -
Argentine scientists have
developed a high-protein
“beef meal” for potential
use as a low-cost nutritional
supplement in protein-poor
nations.
An experimental
dehydration process
developed by scientists
working with the Argentine
Meat Institute converts beef
into a tasteless, odorless
powder with an 87 per cent
protein content.
Described as resembling
powdered cocoa in ap
pearance and texture, the
beef meal has been suc
cessfully used as an additive
in bread, canned goods and
other processed foods.
Researchers report the meal
has no effect on taste or
appearance.
The production process
reportedly eliminates fat
and cholesterol, while
retaining a protein content of
93 - a concentration higher
than cooked beef. One pound
of meal is produced from
five pounds of beef, and is
equal in nutritional value.
The Meat Institute says
the beef meal contains no
chemical additives and can
be stored indefinitely
without refrigeration in
airtight containers.
The institute plans to test
market beef meal in Africa
in 1978.
