buffet dinner and meeting on
September 27 for home
economics teachers of
Lancaster and Chester
Counties. The meeting was

demonstrated with cuts of
pork a variety of ideas and
methods of experimenting
and enhancing pork cooking
knowledge.
McClure stressed the
economical ways to use
pork, and showed some
differences in ways different
portions of meat should be
cut and cooked. He also
mentioned the importance of
having sharp knives when
working with meat. Another
point that was brought out
was the fact that all pork
should be cooked to an in
ternal temperature of 170
degrees F. before serving.
Before the buffet dinner, a
short film was shown, called
“Surprise Me” dealing with
the subject of pork. Then the

guests were treated to a
meal in which each dish had
an ingredient of pork in it.
Included in the meal were:
Sausage Cheese Muffins,
Glazed Ham Balls, Sausage
Casserole, Pork Chow Mem,
Cheshire Pork, Cheese
Pizzas on Muffins, Islander
Nui Cole Slaw, Syrian Stew
(Yukhner), Sausage Cake,
Choucroute et Garni, Hazel’s
Salad, and Meat Balls.
Later in the evening, the
teachers were told how they
could receive free pork for
use in the classroom by
Glenn Hershey, from the
Ezra W. Martm Company.
A variety of pork products
are available for the school
program and interested
home economics teachers
were told to contact the
company at least one week
before the anticipated
delivery day. The preferred
