April 30,1977 Avoid eating undercooked ground beef HARRISBURG, Pa. - Agriculture Secretary Kent Shelhamer recently advised Pennsylvania consumers to avoid eating undercooked or raw ground beef in light of a rising incidence of trichinosis in Pennsylvania and other states. Fourteen cases of the disease, usually related to pork or meat from wild animals such as the black bear, were reported in 1976, an increase of 100 per cent over 1974. According to Shelhamer, the major problem in Pennsylvania concerns pork residuals found in ground beef, residuals of which the consumer is not aware. He said the small quantities of pork could come from inadequately cleaned meat grinders in retail outlets. We have notified all food stores and related associations as well as the main offices of large and small chain stores to" have their meat managers pay strict attention to cleaning and washing grinding machines when pork has been used prior to the grinding of beef,” Shelhamer said, pointing out that the state Department of health has indicated interest in the overall situation. He noted that the Center for Disease Control in Atlanta reported 284 cases of trichinosis nationally, in cluding one fatality in 1975. The figure was nearly 2.5 time higher than the mean number of cases reported during the previous five years by the health agency. Shelhamer said that the laboratory of his Depart ment’s Bureau of Foods and Chemistry has initiated a testing program which can now detect the equivalent of half a thumbful of pork in a pound of ground beef. He said the sampling program would be ongoing to “assure consumers of purchasing pure ground beef and thereby avoiding exposure to trichinchosis.’’ Shelhamer made it clear that the individual odds against contracting the disease were high but also said his department’s samplings were showing a higher incidence of pork residuals in ground beef than were CDC’s regional sam plings. The Agriculture Secretary said that there was no reason why consumers should cut back on ground beef as a “staple of the household diet.” He observed that housewives knew how to cook, pork and that the current problem deals with pork where it is not an ticipated nor recognized. He said that the best way to assure safety is to cook ground beef at a minimum internal temperature of 160 degrees Fahrenheit. The CDC 1975 total of 284 cases represents the highest incidence of trichinosis in the U.S. since 1961. ABS bulls earn GM rating MADISON, Wis. - Two bulls owned by American Breeders Service, headquartered here, have been designated Gold Medal Sires by the Holstein- Fresian Association of America. They are Tri-Town Wis Apollo, and Arlinda Fond Master. ‘‘Wis Apollo” and “Fond Master” permanently join the Gold Medal sire ranks after being both “Production and Type Qualified” in the Registered Holstein Sire Performance Summaries, Volume 1,1977. The Holstein Association, in cooperation with the USDA, calculates and prints sire performance information three times a year. “Wis Apollo” a son of Hilltop Apollo Ivanhoe, VG(B9) GM, qualifies for Gold Medal with a predicted difference for milk (PDM) of plus 720 pounds and a predicted difference for type (PDT) of plus 0.91. This was the highest type rating of all the bulls that received their Gold Medal* rating in the Registered Holstein Sire Performance Summary Volume 1, 1977. Wis Apollo was bred in Lancaster County, by J.Z. Noltof Leola.
