Divide and form into four thick patties or eight thin ones. Handle as little as possible. Pan-fry in small amount of hot fat, broil three inches from heat, or grill on electric grill. Fry or broil eight minutes for rare, 12 minutes for medium, and 16 minutes for well done. Turn once but do not flatten-this presses juices out. On half the patties, spread pickle relish, prepared mustard, catsup, or chopped onions. Top with'remaining thin patties and seal edges. Fry or broil as desired. SUM JIM BURGERS 3 /< lb. ground beef Vi lb. ground pork 1 egg, beaten Vz cup dry bread crumbs One-third cup milk 3 /i teaspoon salt Vi teaspoon pepper On&third cup finely chopped omon 1 tablespoons dry mustard Vz teaspoon Worcestershire sauce 1 small bay leaf, crushed 8 cheese sticks 8 frankfurter buns Heat oven to 400 degrees F. Combine all ingredients except cheese and buns. Divide meat into eight equal portions; mold each portion around a cheese stick. Place on a lightly greased baking sheet with side (jelly roll pan, if available.) Bake about 20 minutes. Serve in warm split frankfurter buns. Top with tomato sauce and garnish with parsley. Makes eight sandwiches. Garnish each bun half with pepper ring and olives. Serve open face. Makes 16 open-face or eight double servings. SOUTHERN BURGERS 1 lb. ground beef 1 medium onion, diced 3 tablespoons catsup 3 tablespoons prepared mustard 1 can (10 - Vz oz.) chicken gumbo soup Brown beef and onion in a little hot fat. Stir in catsup, mustard, and soup. Simmer until mixture has thickened a little, about 15 minutes. Spoon over toasted split buns. (May be made early, refrigerated, and reheated.) Six servings. To utilize all possible space in hog confinement buildings and facilities, the aisles have been made narrow. The feature of a single wheel for moving the Arkfeld Hog Scale allows the operator to move the scale along an aisle only about 22 inches wide. The Scale is only 20 inches wide.
