Apri. 16. 1977_ Q q 4-HWs tO 50 A while back, a contributor wrote into “Recipe Swap” requesting a good recipe for scalloped potatoes and for hints on how to keep the sauce from curdling. We received lots of replies and have those answers for you this week. Mrs. Ethel A. Schaeffer from Bemville wrote to us saying, “In reference to the woman who wanted to make potatoes without curdling: put the mixture on top of the stove first and start it to boil, then make a mixture of one tablespoon or more, if desired, of flour in water and stir it in. Then put in the oven and bake. You can also take one can of mushroom soud and add a can of milk and use this instead of plain milk ” Another suggestion from Harriet Greenawalt, Lan caster, is to parboil the potatoes, drain off the starchy water, place the potatoes in a casserole, and then pour the white sauce over the contents. Bake at 325 degrees F. for one hour. Two recipes for scalloped potatoes follow. SCALLOPED POTATOES 6 medium sized potatoes 4 tablespoons butter or margarine 4 tablespoons flour 2 teaspoons salt 2Vz cups milk 3 slices cheese Peel potatoes and slice thin. Make a white sauce of butter, flour, salt, and milk. When thickened, remove from heat and add cheese. Place potatoes in greased casserole and cover with sauce. Bake uncovered one to one and a half hours at 375 degrees F. Serves four to six. Mrs. Donald Grove Airville, Pa. SCALLOPED POTATOES 2 tablespoons snipped parsley IVz cups thinly sliced onions 4Vz cups thinly sliced pared white potatoes 2 teaspoons salt 3 tablesppons butter 7 teaspoons butter 1 teaspoon salt V 8 teaspoon pepper Vs teaspoon paprika 1 3 A cups milk Heat oven to 400 degrees F. Bring one inch water to boil in covered saucepan. Grease quint casserole (prepare parsley, onions, potatoes). To boiling water, add onions, potatoes, two teaspoons salt. Boil covered five minutes, drain. Meanwhile, melt butU r in double boiler over very low heat. Stir in flour, salt, pepper, paprika and then milk. Cook, stirring constantly, until smooth and thick. The county delegates selected to take part in the statewide event are: Maxine Noll of the Happy Variety Club and David Guindon of the Norgolebco 4-H Club. While in Harrisburg, they will receive a guided tour of the State Capitol Buuilding, visit their local legislators’s offices, and participate in educational workshops greared to increase their understanding of the legislative process. The 4-H members also will casserole, arrange one-third potatoes and onions, sprinkle with Vz parsley, pour on one-third of the sauce. Repeat with on&third of potatoes and onions, rest of parsley and Vz of sauce remaining. Add rest of potatoes and sauce. Bake, uncovered, 35 minutes or until brown. Makes ap proximately five servings. Delicious!
