St. Patrick’s Day is fast
approaching. Next Thur
sday, the whole nation will
be honoring the patron saint
of Ireland. His death on
March 17, 461 has been ob
served in America since
colonial days with the
shamrock serving as the
symbol of this day. Ac
cording to legend, St.
Patrick used the shamrock,
which is the national flower
of Ireland, to illustrate the
Holy Trinity.
From this religious
beginning, the holiday has
evolved to hold secular
significance, as well, with
people wearing green and
hosting St. Paddy’s Day
parties.
Thanks to several con
tributors to the “Home on
the Range” column this
week, you should have no
trouble thinking of foods to
serve on a buffet table for
your St. Patrick’s Day
gathering of friends. There is
a wide range to choose from,
starting out with a holiday
punch, breads, pies,
potatoes, and gelatin salads.
They are all great St.
Paddy’s day ideas and we
want to thank the ladies who
took the time to look through
their recipe files to come up
with foods that fit the bill.
A Beverages
aT. PATRICK’S PUNCH
1 pint milk
1 pint lime sherbet
Few drops green food
coloring
1 quart
carbonated
grapefruit beverage
Mix milk and sherbet
together in punch bowl until
sherbet is soft; stir in food
coloring. Pour carbonated
beverage slowly down side of
bowl; stir carefully. Garnish
with mint or green cherries.
Yield; 12 servings.

IRISH SODA BREAD
4 cups sifted all - purpose
flour
1 tablespoon baking soda
1 tablespoon sugar
2-% teaspoons salt
l-Vi teaspoon cream of tartar
l-M cups buttermilk
1 tablespoon butter or
margarine, melted
Preheat oyen .to 375
degrees F. Grease well a
large cookie sheet. In large
bowl, combine flour with
soda, sugar, salt, and cream
of tartar; mix well. Add
buttermilk; with fork, stir
just until dry ingredients are
moistened. Turn out dough
onto lightly floured board.
Knead lightly until smooth -
about one minute. Shape
dough into a ball; place on
cookie sheet. With hands,
flatten into a seven-inch
circle. With sharp knife,

into quarters. Bake 30 to 40
minutes, or until top is
golden brown and loaf
sounds hollow when rapped
with knuckle. Remove loaf to
wire rack. Brush top with
butte’*; cool completely.

* IRISH COFFEE PIE
1 envelope unflavored
gelatin
Two-thirds cup sugar
V* teaspoon salt
3 /i cup milk
1 egg yolk beaten
1 egg white *
1 envelope whipped topping
1 tablespoon instant coffee
2 tablespoons Irish Whiskey
1 baked (9-inch) pie shell,
cooled
Mix gelatin, sugar, and
salt in a saucepan. Add milk.
Cook over low heat until
sugar and gelatin are
dissolved, stirring con
stantly. Stir a little of this
mixture into egg yolk, then
add rest of yolk to this
mixture. Continue cooking
and stirring one minute.
Chill until slightly thickened.
Beat egg white until stiff
peaks form. Prepare
whipped topping as directed
on package - adding instant
coffee before whipping.
Place pan of gelatin in bowl
of ice water, add whiskey
and beat until light and
foamy. Remove from ice
bath then quickly fold in
beaten egg white and lk>
cups whipped topping. Pour
into pie shell, baked and
cooled. Chill until set.
Garnish with rest of whipped
topping.
