tomato juice

Home canning tomato juice
that has separated is per
fectly safe - it’s just not
appetizing until you shake
the jar before serving, says
Mrs. Velma C. Musser,
Cooperative Extension
Service home economist.
You don’t always prevent
the separation but these
suggetstions may minimize
the problem:
Quickly boil the tomatoes
five minutes right after
cutting and before making
the juice. Prolonged heating
of the juice before it’s filled
into jars increases
separation.
Avoid using watery, over
mature or soft fruit.
Always hot pack tomato
juice - heat to boiling before
filling jars and then heat
process according to modern
directions.
