is popular for its ease in canning mechanics but it does
lack the flavor of many other peaches.
The Belle of Georgia, the last of the four older varieties
Carol mentioned, is the most popular white peach. It is
small in size but very sweet.
“There is no other peach as sweet as the Belle of
Georgia,” says Carol. “When the Belle is in season, the
aroma in the store room is almost too sweet to stand! ” she
adds.
The Belle is a good bearer, but orchards do not raise
many of them because the white peach is an oddity for
most customers. They may buy several baskets of yellow
peaches and one, if any, of the white peach.
“The white peach is like the purple cabbage,” quipped
Carol Groff. “Purple cabbage tastes the same as green;
it’s the color that bothers people.”
In the case of the white Belle of Georgia peach, the taste
is sweeter than the yellow peach.
Some newer varieties of peaches are the Sun High, “a
really good canner and producer”; the Loring, much like
the Sun High; and the Red Skin family the late Red Skin

last minute.
For the shopper who is buying peaches, Carol Groff
gives this information. The early yellow peaches are all
clingstones and for ease in pitting must be allowed to set
for several days before use. Peaches are at their lowest
prices usually during the peak of production when the
supply is the greatest. The early and late varieties are
usually higher in price when the demand is greater than
the supply.
In the storeroom at Groff’s Orchard is a bulletin board
for recipe exchanges.
“Many customers hurry over to it to see what is new but
few remember to bring their own favorite recipes to put
up,” Carol remarked. She gives two recipes that are her
favorites:
3 cups peaches, sliced
2 cups flour
3 tablespoons shortening
1 cup sour milk
3 teaspoons baking powder
Mix the flour, shortening, baking powder and milk
together and roll into a rectangle. Cover with peaches and
sprinkle with sugar and cinnamon. Roll into a long roll,
slice, and place in a baking dish. Cover with the following
syrup:

1 cup water
1 cup sugar
1 tablespoon flour
Bake in 400-degree F oven for 10 minutes. Reduce to 375
degrees F and bake as a pie. Serve warm with milk like
dumplings.
Sour Cream Peach Pie
One unbaked pie shell
Fill shell with one layer of fresh halved peaches.
Add pieces between the halves.
Beat:
2 eggs
1 cup sour cream
1 cup sugar
Vz teaspoon vanilla
Pour sour cream mixture over peaches. Bake at 425
degrees F for 15 minutes. Turn back oven to 375 degrees F
for 30 minutes.
When freezing peaches for her family of four, which
consists of Carl and her two daughters Debra, four
years-old, and Kristen, seven-weeks-old Carol does not
use preservatives except in the instance of white peaches
which otherwise will turn brown when they thaw. She
slices the peaches and sprinkles sugar over them as if she
