Today’s recipes are picnic
desserts. They sound
terrific! This summer’s
picnics should be really
delicious with foods like
these in the baskets.

Pecan Fingers
% cup shortening (half
butter or margarine,
softened)
% cup confectioner’s sugar
IVz cups flour
2 eggs
1 cup brown sugar (packed)
Vi teaspoon baking powder
Vz teaspoon salt
Vz teaspoon vanilla
1 cup chopped pecans
Heat oven to 350 degrees F.
Cream shortening and
confectioner’s sugar. Blend
in cups flour. Press
evenly in bottom of
ungreased baking pan, 13 i 9
x 2 inches. Bake 12 to 15
minutes.
Mix remaining
ingredients; spread over hot
baked layer and bake 20
minutes longer. Cool; cut
into bars, about 3xl inch.

4 eggs separated
IVz cups sugar
8 tablespoons cold water
2 cups flour
3 teaspoons baking powder
Vz teaspoon salt
Separate eggs. Beat yolks,
and mix rest of ingredients.
Add egg white last. Bake at
325 degrees F. until done.
FILLING;
IVz cups milk
2 tablespoons cocoa
Vz cup flour
Vz cup milk
1 tablespoon butter

Cooking Edition
1 cup sugar
2 eggs
Vanilla
Mix milk, cocoa and flour
with Vz cup milk. Add rest of
ingredients and boil in
double boiler until thick.
Cool and spread on cake.

Apricot Fluff
2 tablespoons unflavored
gelatin
2 cups cold water
1 cup boiling water
1 cup sugar
Vz teaspoon grated lemon
rind
1 cup apricot puree
2 egg whites, stiffly beaten
Dash salt
Soften gelatin in V* cup
cold water for five minutes,
add hot water and stir until
dissolved.
Stir in sugar, salt, lemon
rind, apricot puree, and
remaining water; chill until
mixture begins to thicken.
Beat until fluffy and fold in
egg whites. Chill until firm.
Serve with custard sauce.

Then add nuts and semi
sweet chocolate pieces. For
a softer, more-rounded
cookie, use a little more
flour.

preheated oven at 400 F. for
35 to 40 minutes or until
puffed and golden brown.
Remove to wire rack and
cool completely. Can be
