Backyard Beyond xxx Butter-grilled French Fries Take four 10-oz. packages frozen French fried potatoes. Divide a stick (Vt lb.) butter into four parts. Unwrap potatoes. Place potatoes from each package on a separate square of heavy duty foil. Dot each package with one-fourth of the butter, salt and pepper to taste. Re wrap potatoes, allowing some room for steam and using drugstore folds on all three edges. Cook over hot coals 30 to 40 minutes, tur ning packages three or fourtimes during grilling. Enough for eight. To make a drugstore fold, hold two edges even. Turn and fold together in a 1-inch wide fold until the fold doses tightly against the package. (You can add your own favorite seasonings, if desired.) Divide in half. From one half make eight round patties, V*- inch thick. Arrange with waxed paper separating and covering them on serving platter, chill. Divide remaining half into sixteen equal portions. Count eight slices of cheese. Place a portion of meat on each side or a slice of cheese and flatten until the meat covers cheese slice in thin layers and side edges are throughly covered. Chill these square patties, too. Toast sesame seeds in a moderate oven, 350, for 5 minutes. Mix with softened butter. Split the hamburger buns and spread both cut sides with sesame butter mixture. Near serving time, heat buns in slow oven. Arrange grill 3 inches away from glowing coals. Grill plain meat patties first, about 3 to 5 minutes per side, until browned. Serve in sesame buns with a slice of cheese over meat patty. Grill cheeseburgers allowing only 3 to 4 minutes per side (meat mixture is quite thin). Serve in sesame bun. Let guests add their won relishes: barbecue sauce, chili sauce, dill pickle slices, mustard or lettuce. Makes 16 cheeseburgers. [Continued from Paie 53]
