2 cups confectioners sugar
1 cup chopped pecans
3 beaten eggs
1 teaspoon vanilla
2 quarts vanilla ice cream
Sprinkle about % of the
crumbs into the bottom of a
13 x 9 inch pan. Melt butter
and chocolate over low heat
till it boils. Stir in sugar, nuts
and eggs. Add vanilla. Spoon
chocolate • mixture over
crumbs and freeze. Spoon
slightly softened ice cream
on top of chocolate mixture
and sprinkle with remainder
of'crumbs. Freeze. Serves 9.

chocolate - melted
1 cup chopped walnuts
Combine cream cheese,
sugar, water and vanilla.
Blend until smooth. Quickly
stir in melted chocolate and
ijuts. Turn into buttered pan,
spreading fudge one inch
thick. Chill and cut into
squares.

Batter Nat Ice Cream
Combine:
5 cups milk
2¥s cups sugar
V* teaspoon salt
Bring to boil and soak 2
packages or 2 tablespoons
gelatine in % cups cold
water. Mix IVz tablespoons
flour with enough cold milk
to make smooth sauce. Stir
flour mixture into hot milk
stirring constantly until it
comes to a boil. Add gelatine
and remove from heat. Chill
and stir occasionally until it
begins to thicken then add: 1
cup milk, 2 cups cream, 1
can evaporated milk and Vh.
teaspoons vanilla. Cool 4-5
hours. Melt 3 tablespoons
butter in small sauce pan.
Add 3 cups chopped pecans
or almonds and heat until

Mint Chocolate Chip
Ice Cream
4 eggs
2 cups sugar
V* teaspoon salt
6 and two-thirds cups
evaporated milk
1% cups grated milk
chocolate
IVz teaspoons mint extract
Add sugar gradually to
beaten eggs and continue to
beat until stiff. Stir in
remaining ingredients.
Chum and freeze.

Quick Vanilla
Ice Cream
packages topping mix
teaspoons vanilla
eggs
cups sugar
Beat topping mix as
directed adding 3 teaspoons
vanilla. Put into container.
Beat sugar and eggs
together and smooth and
creamy. Add to topping and
add mOk to 5 inches from top
of ice cream container.
Churn and freeze.

Cheese Custard
1 cup cottage cheese
Vz cup pulverized sugar
5 eggs, separated
1 cup sweet cream
V« cup butter, melted
Vt teaspoon grated nutmeg
Mash cheese and stir in
sweet cream, sugar and
beaten egg yolks. Flavor
with nutmeg. Add stiffly
beaten egg whites. Line
pudding dish with pie crust
and pour in the cheese

Cream Cheese Pie
1 - 5-ounce package cream
cheese
% cup milk
1 package lemon instant
pudding mix
IMs cups cold milk
Soften cream cheese at
room temperature and beat
% cup milk with cheese. Add
pudding and the rest of milk.
Beat together and pour into a
baked pie shell or graham
cracker crust. Cool at least
two hours. Makes one nine
inch pie.

Egg Cheese
2 quarts sweet milk
6 eggs
2 cups buttermilk
1 teaspoon salt
2 teaspoons sugar
Warm sweet milk. Beat
eggs until fluffy add but
termilk, salt and sugar. Beat)
slightly and pour slowly into'
warm milk. Cover pan with
lid and let stand for several
minutes on medium heat
stirring only occasionally.
Remove lid and watch for
curds and whey to separate.
Immediately spoon the curds
lightly into a pierced mold
using a slotted spoon, leave
to cool and drain. It is the
gentle spooning into the mold
that prevents the cheese
from getting solid and
heavy. When cold and
drained, unmold cheese onto
a plate and serve with bread
and molasses. Makes 8
servings.
