XXX Cream Cheese Pie 1 - 5-ounce package cream cheese % cup milk 1 package lemon instant pudding mix IMs cups cold milk Soften cream cheese at room temperature and beat % cup milk with cheese. Add pudding and the rest of milk. Beat together and pour into a baked pie shell or graham cracker crust. Cool at least two hours. Makes one nine inch pie. E. Maynard Pottstown, Pa. XXX Lancaster County Egg Cheese 2 quarts sweet milk 6 eggs 2 cups buttermilk 1 teaspoon salt 2 teaspoons sugar Warm sweet milk. Beat eggs until fluffy add but termilk, salt and sugar. Beat) slightly and pour slowly into' warm milk. Cover pan with lid and let stand for several minutes on medium heat stirring only occasionally. Remove lid and watch for curds and whey to separate. Immediately spoon the curds lightly into a pierced mold using a slotted spoon, leave to cool and drain. It is the gentle spooning into the mold that prevents the cheese from getting solid and heavy.
