High Value, Low Cost
Once you have saved,
borrowed or otherwise
acquired the money to pay
for a long-dreamed-of
vacation, the question
arises: How will you carry
it? Cash is too dangerous.
Credit cards may not be
useful in all circumstances.
And personal checks are
almost useless away from
home especially in a
foreign country.
Obviously, you want and
need a means of exchange
that will provide both wide
international acceptance
and protection against loss.
Nothing fits that bill better
than travelers checks.
Available to vacationers
since the end of the 19th
century, these self
identifying money orders are
widely accepted by hotels,
merchants and restaurants
because they include a
guarantee that will be
honored by the issuer if
proper cashing procedures
have been followed.

Protection against loss is
provided by the bank or
issuing company itself,
provided that you have
agreed to and met certain
conditions stated at the time
of purchase.
When you purchase
travelers checks, you will
sign them once in the
presence of the seller and
leave behind a sample of
your signature for the files.
When you cash one of the
checks, you sign it again in
the presence of the person
accepting it so that the two
signatures can be compared.
Travelers checks may be
obtained in various
denominations, usually $lO,
$2O, $5O or $lOO. The fee to
purchase them is nominal
normally about one percent
of face value, or $1 for $lOO
worth of checks. In some
cases, they are free to bank
customers.

checks are lost or stolen:
Keep the checks in your
possession at all tunes.
Do not keep the purchase
receipt with your checks. If
the checks are lost or stolen,
you will need that receipt to
get a refund. You might even
want to keep another list of

Keep a record of the
numbers of the checks you
cash, when and where you
cashed them and the amount
involved so you will know
which ones were lost or
stolen. And finally,
Do not sign the checks the
second time until the
moment you are ready to
cash them. If your lost or
stolen checks have been
signed twice, you will
probably have difficulty in
obtaining a refund.

inducing, then eating it is
positively elating!
Cheese is really countless
different foods, depending on
variety. There are styles
bland enough for baby, tasty
enough to tempt the fussiest
eater, and delicate enough to
please the most
discriminating gourmet.
Cheese and other dairy
products really come into
their own around this time of
year ... with production
approaching the seasonal
peak. I would like to suggest
serving cottage cheese with
fresh fruit for light lun
cheons, or sliced cheese in
main dish Chef’s Salads,
perfect for too-warm-to-feel
like-cooking dinners. Cheese

Do you know how to care
for cheese? All natural
cheese should be kept
refrigerated. Soft unripened
cheeses, such as cottage,
cream, or Neufchatel, are
quite perishable and should

after purchase. Ripened or
cured cheeses keep well in
the refrigerator for several
weeks if protected from
mold contamination and
drying out. When possible
the original wrapper or
covering should be left on the
cheese. The cut surface of
cheese should be covered
with wax paper, foil, or
plastic wrapping material to
protect the surface from
drying.
Mold which may develop
on natural cheeses is not
harmful, and it is easily
scraped or cut from the
surface of the cheese. The
particular mold in the in
terior of such cheeses as
Blue, Gorgonzola,
Roquefort, or Stilton has
been carefully developed to
produce the characteristic
color and distinctive flavor
of those varieties and is
consumed as part of the
cheese.
Except for soft unripened
cheeses, all cheese should be
served unchilled in order to
help bring out its distinctive
flavor and texture
characteristics. This usually
requires 20 minutes to one
hour or more at room
temperature.
