Another interesting recipe found twice In Rickert s neat
notebook was for “Dally Stock Yeast.” Punctuation was
nonexistent, and this reader was not quite sure of the
directions, but here it is:
6 qts. of Water
2V« lbs. of Flour
1 oz. Hops
2 oz. Mals
“Add Hops when boiling when Boiled 5 minutes take 1
qt. of Hop Water strain on Flour and make a Stiff paste
boil balance of Hops 10 minutes longer strain on paste and
let stand till cold then add the malt to desolver the paste
till fine then take 1 qt. of Stock or 1% qt. of Potatoes Yeast
to stock away let raise about 9 hours. Use 4 qts of Stock to
start Potato Yeast."
The casual reader of Rickert’s notebook encounters a
little shock following the several pages of recipes. After a
page of scribbling comes this recipe:
Hoof Ointment
2 lbs. Pitch of Tar
2 lbs. Tallow
3 pints Kneds foot oil
Lampblack
Obviously, the horse which delivered all those delicious
baked goods were not neglected, and their hooves
received care ctjual to the lemon cakes and daily stock
yeast. ,
Mrs. Strauss, out of a deep family interest and a
knowledge of the worth of things past, also has the booklet
published in 1912 in commemoration of the 100th Hope
Hose Fire Company in Manheim.
The advertisements themselves are of great interest,
but Elam Showers, the baker for whom her great uncle
worked has a very enlightening ad. It read as follows:
“Elam Showers; Bread and Cake Baker; Parties,
Weddings and Funerals, Promptly Served on Short
Notice. Orders Solicited. My Team Will Stop At Your Door
and Serve You. North Charlotte Street, Manheim.” These
words of solicitation were attractively printed on a full
page ad. The idea of having a team stop at the door and
serve you must be one of the better customs of the “good
old days.”
Mrs. Strauss, who grew up in Manheim as Janet
Atkinson, says her family was originally from Maryland,
while her husband’s family comes from the Brickerville

area. She lived In Manhelm for 21 years and she and her
husband have lived on their present (arm on Durlach
Road at Ephrata RDI (or 21 years.
They own 10 acres, and raise horses as a hobby. They
also raise a steer and a pig to butcher annually, but the hill
behind their home Is filled with sheep. Mrs. Strauss says
they never had sheep until their oldest son was In ninth
grade at Ephrata and got a pen of three through the
Future Farmers of America.
Now all three boys own some sheep as well as the
Strausses. The boys also have some hogs ns FFA projects.
One pleasant by-product of raising sheep Is wool. Mrs.
Strauss has the wool dyed and spun into yam, which she
uses In crotchetlng. She has a lovely wool afghan and says
she makes her family wool sweaters, which are really
w&nn
Mrs. Strauss has saved many other family heirlooms
which are of sentimental and historical value. One
example is the account book of the father of her great
uncle, Charles W. Rickert.
The elder Rickert did some work for the Sisterhaus at
the Cloister and shows that he received for one day of
plowing potatoes, $2.00. Another day he received $2.25 for
the same work and on another day he received $2.25 for
hauling manure. This was in 1844.
In 1843 he purchased 2 watermelons for $.20 and m
1856 he “kild one calf” for $.37%. in 1859 he received
$1.62% for butchering ”3 hangs."
By comparison, in 1888 he purchased the following;
Suit of Clothes for Self $30.00; Dresses for Wife 25.00;
Children’s Clothes 20,15; Groceries 18.25; Crockery 15.20.
Account books which were so carefully kept then are
becoming rare, but offer great insight into the life and
times of our forebears in the last century.
