Wait for one minute and slowly add gingerale. Stir gently and add small ice pieces. The trick for good punch is to chill juices and gingerale for at least 12 hours. Stoltzfus Leola, PA XXX Easy Ham and Bean Soup 1 large can northern white beans 1-1 lb. package smoked ham cubes 3 large carrots, diced fine 1 large onion, diced fine 1 tablespoon brown sugar salt and pepper to taste Cut ham cubes into small pieces arid brown slightly in large frying pan. In a large pot or crock pot combine beans except one cup, brown sugar, salt and pepper. Begin to simmer on low heat. In a pan of boiling water combine diced carrots and onions. Cook until tender then add to soup. Add ham and cook slowly. Crush the one cup of beans that were reserved and add to the soup. Also stir in 2 tablespoons of ketchup. Cook slowly for five hours or all day in crock-pot. Serve with hot rolls and a salad for- a hearty warm meal. L. F. file XXX Marshmallow Cream Have water boiling in a double boiler. Put these ingredients in a double boiler pan: % cups sugar; ft teaspoon cream of tartar; ft cup light corn syrup; 2 tablespoons water; ft teaspoon salt and 2 egg whites. Put pan with Ingredients on top of boiling water and beat till it holds stiff peaks. Remove from hot water and add 1 teaspoon vanilla and beat thoroughly. If used for frosting, spread while still warm. Refrigerate for further use. Mexican Fried Eggs This variation of the familiar breakfast treat add a zip to ordinary meals! Green pepper and cream cheese provide a special taste that is sure to be noticed. 6 eggs 3 medium sized tomatoes, chopped 1 onion, chopped 1 teaspoon parsley, chopped Vz teaspoon olive oil 1 teaspoon cider vinegar 1 red or green pepper sliced thin 4 ounces of cream cheese Fry eggs in butter and place on a hot platter. Salt to taste. Fry onion, parsley in butter for 3 minutes. Pour over eggs. Sprinkle with oil and vinegar. Garnish with pepper slices and small lumps of cream cheese. Serves 3-4.
