Add flour, salt and pepper; blend. Add milk. Cook over low heat, stirring constantly until thickened. Add parsley, meat, lemon juice, onion; chill thoroughly. Divide mixture into 8 portions; shape into rolls or balls. Combine egg and water. Roll croquettes in crumbs; then roll in egg mix ture, then crumbs again. Heat fat in deep fryer to 390 degrees F. or until hot enough to brown an inch cube of bread in 20 seconds.
