Italian sausage i Hie product name, "Italian Sausage," represents a distinctive type of sausage to consumers, and to help maintain that identity, the U.S. Department of Agriculture (USDA) is adopting a new standard of composition for such products. USDA’s Animal and Plant Health Inspection Service +APHIS) said that Federal meat inspection regulations covering these products (currently labeled “Italia™ Brand Sausage”) will be amended effective Dec. 31, 1976. According to APHIS processors will have until the effective date of the new standard to deplete present label inventories and to submit new labels for ap proval. Briefly, the new standard described “Italian Sausage" as an uncured, unsmoked sausage in casing or in link, bulk or patty form, con taining at least & percent pork, or a combintation of pork and fat, the total of which contains not more than 35 percent fat; salt, pepper and either fennel or anise spices, or a com bination of the two. In addition, the sausage may contain optional ingredients appropriate for this product, such as spices (including paprika) and flavoring, red or green peppers, garlic, sugar, and onions. Generally, under federal meat regulations, terms referring to a locality dif ferent than that in which the product is prepared may appear on die label only when qualified by the words, "style,” “brand,” or “type." When the world “style” or “type” is used, there must be a recognized style of product identified with and peculiar to the area represented by the geographical term. The product must possess characteristics of that style. More than three years ago. APHIS published a proposed standard and sought the public’s views to determine whether there was a recognized style for “Italian Sausage"; if so, what the characteristics are; and if, in the interest of consumers, a standard for this product should be adopted. Comments received in dicated there is a recognized style and generally sup ported the need for stan dardizing this product, APHIS said. In addition, the name “Italian Sausage" appears in general use in the United States by those who produce and consume it. Consequently, the terms “style” or “type” do not appear necessary and are not required on the label by the new standard of com position. As a result of public comments received, there are several differences between the standard an nounced and the one initially proposed.
