from the various
agricultural organizations
throughout the state and

Honey Sponge Cake
4 eggs, separated
1 cup sugar
1 and one-third cups honey
cup vegetable shortening
4 cups flour
1 teaspoon cinnamon
1 teaspoon allspice
lJ t teaspoon salt
1 teaspoon soda
2 teaspoons baking powder
1 cup strong black coffee
2 tablespoons orange juice
1 teaspoon orange rind,
grated
Cream egg yolks and
sugar. Add honey and
shortening and beat until
light. Add sifted dry
ingredients alternately with
coffee. Add orange juice and
rind. Fold in stiffly beaten
egg whites. Pour into 2 9x5
inch loaf pans. Bake at 350
degrees for 1 hour.

Edelweiss Quiche
9 inch unbaked pie shell
2 cups .chopped cooked
chicken
cup shredded swiss cheese
4 eggs
1 cup milk
Vz cup chicken broth
1% tablespoons instant
minced onion
1% teaspoons seasoned salt
Sprinkle pie shell with
chicken and cheese. Beat
together remaining
ingredients until combined.
Pour over chicken and
cheese. Bake in preheated
375 degree oven for 30
minutes. Let stand 5 minutes
before serving.

1 pound pork sausage (fresh)
1 tart apple, grated
1 slice bread, shredded
1 egg. •d. »htiy beaten
2 cans Iked white potatoes,
drau io
paprika
Combine pork sausage,
apple and bread with egg,
shape mixture into 4 patties.
Place potatoes in bottom
part of broiler pan and
sprinkle with paprika. Place
patties on top of broiler pan
and place over potatoes.
Bake in moderate oven for 40
minutes. Makes 4 servings.

Tropical Treat Peaches
1 can (large) peach halves,
drained
Vi cup pineapple topping
sliced macadamia nuts or
almonds
>4 teaspoon cinnamon
Place peaches cut side up
in square baking dish. Mix
topping nuts and cinnamon.
Spoon topping into peach
halves and sprinkle with
nuts. Bake in 350 degree oven
until heated. Serve warm.

German Potato Puffs
4 large potatoes
2 eggs
1 cup milk
Vi cup flour
salt to taste
1 tablespoon oil
Pare and grate raw
potatoes. Thoroughly drain
off liquid. Mix with eggs,
milk, flour and salt to form
dough. Heat fat in skillet.
Drop dough by V* cups into
fat and spread out to form
small pancakes. Fry on both
sides to deep golden brown.

Notebook
When we go to the Farm
Show at Harrisburg, I
usually ask my husband to
drop me off downtown so
that I can spend the morning
shopping. In the afternoon I
take the bus to the Farm
Show buildings and see what
is new. This year I especially
enjoyed the lack of cigarette
and cigar smoke. I’ll always
remember that huge blue
grey smoke cloud that hung
over the machinery displays.
Years ago, before all the
children were old enough
for school. I’d spend a few
relaxing hours with them in
the large department stores.
We would look and look and
I’d explain and explain what
we were seeing. Eating
lunch in a restaurant was
also a treat for all of us. Now
I look and leam alone.
The other week I pur
chased a recently published
book on farmhouses. The
pictures show 17th, 18th, and
19th century homes in
northeastern United States.

They arc made of log, stone
or bnck and often patterened
after those found in the
countries from which the
settlers came Some are not
in very good condition.
There is also an interesting
section on outbuildings.
There are samples of
summerhouses,
spnnghouses, bake ovens
and smokehouses. We
recently put new shingles on
our brick smokehouses
which stands in the middle of
our garden and therefore it
should be in good shape for
many years to come.
Sometimes when we do a
certain job over and over
again it becomes so
automatic that we no longer
think about it. Well, it seems
that after measuring the
milk in a tank, a truck driver
threw the switch to load his
truck but inadvertently
threw it the wrong way and
pumped the farmer’s tank
full and overflowing with
milk from the truck.
