Solanco nurse combines farm life with her profession

group from school to Williamsburg October 24,2$ and 26,
on an educational tour. Joan likes to cook and do
housework. She and Janet go ahead with it while their
mother is at work.
David will be ten in November. He is a fourth grader at
Little Britian Elementary School. He wants to take up
drums. His farm job is to take care of the chickens. He has
been in Cub Scouts one year.
Mrs. Jackson has been a member of Fulton Grange for
27 years and filled the offices of Flora and assistant
pianist. Richard is a 25 year member, having been so
honored two weeks ago. Peggy has been a member for six
years. She was active in the youth group when she was in
the community. Mr. and Mrs. Jackson have been mem
bers of Lancaster County Pomona Grange for 25 years.
Mrs. Jackson served as pianist for four years. She has
been a sixth degree member many years and took part in
presenting it at the State Grange convention at
Harrisburg in 1930. Peggy has been a member of Pomona
Grange for six years and is a sixth degree member. Mrs.
Jackson will serve as one of the nurses on duty part of the
time the Pennsylvania State Grange is meeting in Lan
caster October 27 through the 30th.
Sarah has been a member of the Robert Fulton Chapter
446 Order of Eastern Star since 1954 and used to sing in
their choir. All three daughters have been in Job’s
Daughters Bethel 14 which meets in St. Paul’s Church Of
Christ in Quanyville. Janet was Honored Queen from
April to October 1974.
Mrs. Jackson was a Den Mother for Robert Fulton Cub
Pack 130 for three years while Tom was a Cub Scout.
She has been a member of Farm Women Society 21 for
21 years. She served as their president for three years and
vice-president for one year. She frequently played the
piano at their meetings and was pianist two or three times
for County convention.
Richard has bowled on the Quarryville Merchant’s
League for 30 years and their team has won several
trophies. He is a member of the Southern Lancaster
County Sportsman’s Association.
The Jacksons are active members of Little Britain
Presbyterian Church. Sarah, Janet and Joan sing in the
choir. Janet, Peggy and Joan also sang in the Junior
choir. Sarah does substitute teaching in the Sunday
School. Peggy, Joan and Janet have been active in the
church youth groups. Richard has served as an Elder and
a Trustee in the church through the past several years.
Richard and Sally have a garden and raise lots of
vegetables which Sally freezes and cans.
Sally has worn some of her many cookbooks rather thin
cooking for a family of eight and extra help at times. She
is passing along some seasonal as well as other favorite
recipes. She says she always has some of the mayonnaise
in her refrigerator to use for such dishes as potato salad
and tuna fish salad:
1% cups sugar
V* cup flour
% cup vinegar
IV2 cups water
Boil, let cool slightly and add:
1 cup mayonnaise (commercial)
V< cup mustard
Beat until smooth.
BAKED PINEAPPLE
V* lb. butter
4 eggs
1 cup sugar
5 to 7 slices bread, cubed
1 20 oz. can crushed pineapple
Cream butter and sugar. Beat eggs and add. Add bread
cubes and pineapple. Put in greased casserole. Bake at
350 degrees for one hour. Serves 6.
OLD FASHION GINGER SNAPS
2V4 cups flour
V* cup molasses (Brer Rabbit)
1 egg
3 A cup shortening
1 cup sugar
2 level teaspoons soda
MAYONNAISE
Mi teaspoon ginger
1 teaspoon cinnamon
‘k teaspoon cloves
‘k teaspoon nutmeg
Melt shortening in large pan, over low heat. Let cool,
then add egg, molasses and sugar. Beat well. Add dry
ingredients (Sifted together). Let cool in refrigerator for
awhile. Pinch off about 1 teaspoonful at a time and roll
into 1 inch balls, in sugar. Bake 2 inches apart on cookie
sheet at 350 degrees.
GRANDMOTHER’S PUMPKIN PIE
Filling:
2 cups cooked and sieved pumpkin
1 tablespoon flour
3 /a cup sugar
1 beaten egg
1 teaspoon cinnamon
1 teaspoon lemon extract
1 cup milk (scalded) with 1 tablespoon butter
Mix flour into pumpkin. Add sugar, cinnamon, extract,
egg and milk. Pour into 9 inch unbaked pie shell. Bake at
400 degrees until custard is firm.
CHOCOLATECAKE
2*k cups cake flour
13/*I 3 /* cups sugar
1% teaspoons soda and 1 teaspoon salt
2 pkg. Nestles Choco Bake (in squeeze bag)
m cups water
two-thirds cup shortening
2 eggs
Sift all dry ingredients together into mixing bowl. Add
water, shortening, eggs and chocolate. Beat 4 minutes.
Bake at 350 degrees for 35 minutes.
