While the season is
drawing to a close, our Junior
cooks have provided us with
some interesting summer
dessert recipes. We hope
you'll give them a try, as
each one sounds very tasty.

Cherry Delight
2 cups graham cracker
crumbs
U pound margarine
Combine to make a crust.
Prepare one envelope of
whipped topping mix ac
cording to directions. Add h
cup powdered sugar and
teaspoon vanilla. Beat 1-6
ounce package of cream
cheese til soft and combine.
Spread on crust and chill.
Top with cherry pie filling or
fresh fruit.
Apricot Bubble Balls
1 package dry yeast or 1 cake
compressed yeast
*4 cup hike warm water
cup milk (scalded)
1-3 cup sugar
1- cup shortening
1 teaspoon salt
2- cup apricot or pineapple
jelly
3 /4 cup finely chopped nuts
cup sifted flour

3 cups sugar
1 teaspoon cinnamon
Soften yeast in warm
water. Add to milk 1-3 cup
shortening, sugar and salt.
Stir till dissolved and cool to
lukewarm. Stir in one cup
flour. Beat well. Add sof
tened yeast and eggs. Add
remaining flour to make a
soft dough. Mix thoroughly
and placed in a greased
bowl. Cover and let rise.
Punch down and let rise
again for 10 minutes. Divide
into 20 pieces and form into
balls. Place a layer of 10
balls in a tube pan. Spoon
jelly between each and
sprinkle with nuts. Repeat
the layer. Cover and let rise
about 45 minutes. Bake at
350 degrees for 30-35
minutes.

3 tablespoons cold water
Vi cup powdered sugar
1 cup milk
3 /4 cup granulated sugar
‘4 teaspoon salt
1 teaspoon vanilla
2 cups heavy cream
Melt chocolate over hot
water while soaking gelatine

Chocolate Souffle

in cold water. Stir powdered
sugar in chocolate as well as
possible. Heat milk until film
shines over surface then stir
thoroughly Into chocolate
mixture. Cook stirring
constantly until boiling
point. Remove from heat and
mix into gelatine sugar, salt,
vanilla and chill until thick.
Beat and add whipping
cream. Chill in freezer
before serving.

Caramel Candy
1 cup brown sugar
1 cup molasses
1 cup light cream
Ms cup butter
Ms cup nuts
1 teaspoon vanilla
Cook until it forms a chewy
ball in water. Put in buttered
pan.

Mint Patties
1 pound powdered sugar
V« pound butter
3 teaspoons cold water
Vz teaspoon peppermint
extract
Melt butter and mix with
sugar. Put in peppermint
and add water. Roll in balls
and flatten with a fork.

Chocolate Fudge Cake
4 squares (4 ounces) baking
chocolate
M> cup hot water
M: cup sugar
' 2 cups sifted cake flour
1 teaspoon baking soda
1 teaspoon salt
cup shortening
iv 4 cup sugar
3 eggs
% cup milk
1 teaspoon vanilla
Preheat oven to 350
degrees. Line the bottom of
two 9 inch layer cake pans
with paper. Cook chocolate
with hot water in the top of
double boiler. Stir con-
stantly. Add cup sugar.
Cook and stir two minutes
longer. Cool to lukewarm
while mixing cake. Sift flour,
sods and salt. Cream
shortening and IV< cup sugar
add eggs one at a time
beating thoroughly after
each addition. Add flour and
milk alternately to the
creamed mixture beating
after each addition until
smooth. Add chocolate
mixture. Bake 30 minutes
and frost with chocolate
icing.
