The stem should be gone, leaving a smooth, symmetrical shallow basin 2 The netting, or veimng, should be thick, coarse, and corky 3 The skin color between the netting should have changed from green to a yellowish-buff, yellowish gray, or pale yellow While the above three signs indicate maturity, you also want to be sure that your cantaloupe is ripe The rind should have a yellowish cast and a pleasant can taloupe odor when held up to the nose It should also yield slightly to light thumb pressure on the blossom end of the melon Most cantaloupes are quite firm when freshly displayed in stores Therefore, it is usually a good idea to hold them at room temperature for a few days to allow for completion of the ripening process Then put them in the refrigerator An overripe cantaloupe will have a pronounced yellow rind color, and the entire rind will be soft. Mold growth indicates decay Small bruises, however, normally will not hurt the fruit, but large bruised areas should be avoided because they generally cause soft, watersoaked areas un derneath the rind. With these few indicators in mind, you should have no trouble in selecting delicious, juicy melons to perk up your summer meals Imitation Chocolate Next time you buy some chocolate, look carefully at the label. Chances are the ingredient listing will show “chocolate flavored” rather than chocolate. Most consumers either are unaware of the difference or, if they are eating more chocolate and enjoying it less, they aren’t sure why Harold Neigh, Extension consumer marketing specialist at The Penn sylvania State University, points out that candy makers and food processors using chocolate suffered two economic blows last year high prices for both sugar and cocoa butter. High prices of ingredients made it necessary for candy manufacturers to either reduce the size of candy bars, raise prices, or both. Most companies did both and then started looking around for substitutes. She then led the members in the 4-H Pledge. The minutes of the last meeting were read and roll call was taken with each member responding by telling how far she is with her project. A treasurer’s report and a report from the round-up committee were given Ruthann Irwin, Cathy Brubaker, and June Grube commented on their ex change trip to Colorado. The members then selected Ruthann Irwin and Leslie Grove as their senior and junior queen candidates, respectively A county council report was also given by Ruthann Irwin. Nobody m the industry is suggestmg that the days of pure chocolate are num bered, but most agree that substitute coatings will take a larger share of the chocolate-bar market. Lincoln Sewing Club The eighth meeting of the Lincoln Sewing Club was held Wednesday morning, July 23. Carol Balmer. president conducted the business meeting. Game and song leaders Nancy Nolt and Tonya Lehman respectively lead the group in recreation and group singing. Members then worked on their projects.
