Recipe Exchange .. • Home on the Range Welcome to another edition of Home on the Range! This week we are featuring some delicious recipes for main dishes as well as desserts. Also we’ve included two recipes for Red Velvet Cake which were sent in during our request. Be sending along your favorite. We’ll be looking forward to it! Shoo-Fly Pie 1 egg, beaten 1 cup molasses 1 cup hot water 1 teaspoon soda in a little water Crumbs: 1 cup'flour 1 tablespoon brown sugar 1 tablespoon shortening % cup brown sugar V 4 cup cocoanut (optional) Set aside Ms cup crumbs and mix rest to molasses mixture. Pour in unbaked pie shell. Bake at 350- degrees for 35 minutes. Makes one 9 inch pie. Mrs. Earl Hoover Manhelm, PA XXX Raisin Pudding 1 cup flour 1 cup sugar 2 teaspoons baking powder y* teaspoon salt Vfc cup milk 1 cup raisins 2 cups boiling water 1 cup brown sugar 1 tablespoon butter Sift flour and measure. Combine flour, sugar, baking powder and salt together. Add raisins and milk and mix thoroughly. Pour into a greased baking pan. Make a syrup by boiling brown sugar, butter and boiling water. Pour hot syrup over dough and bake at 350 degrees for 35 minutes. AnnieS. King Paradise XXX Frosted Meat Loaf 3 pounds ground beef I 3 * cup grated onion V 4 cup soft bread crumbs % cup strong coffee 2 teaspoons salt 1 tablespoon prepared mustard 1 tablespoon Worcestershire sauce V« teaspoon tobasco sauce 3 cups hot mashed potatoes Combine beef, onion, bread crumbs, coffee and seasonings. Blend well. Pack lightly in greased 10 inch ring mold. Bake at 350 degrees for 40 minutes. Drain off liquid and invert on serving platter. Quickly frost with mashed potatoes and brown under broiler till brown and fill center with cooked lima beans and carrots. Makes 6-8 servings. Bertha Bolton Lancaster, PA XXX Red Velvet Cake Vz cup shortening \Vz cups sugar 2 eggs 2 tablespoons cocoa 2 ounces red food coloring 1 teaspoon salt 1 teaspoon vanilla 1 cup buttermilk 2Vz cups cake flour \Vz teaspoons soda 1 tablespoon vinegar Cream together shor- tening, sugar and eggs. Make a paste with cocoa and food color and add to creamed mixture. Mix salt and soda with buttermilk and add alternately with flour to creamed mixture beating well. Mix soda and vinegar and fold into cake mixture. Do not beat in. Bake at 350 degrees until done. Alice M. Weaver Quarryville, PA XXX Tennessee Cake • 1 box lemon cake mix (do not use chiffon mix) Add: % cup water 4 eggs Beat two minutes and add 1 package instant lemon pudding and % cup corn oil. Stir in well then bake at 350 degrees for 30-35 minutes. While cake is baking mix topping using: 2 cups powdered sugar, 2 tablespoons water, 2 tablespoons butter (melted) and one-third cup orange juice. After cake is taken from the oven, take a fork and punch holes all over cake. Then spread on topping. Mrs. Chet Long Akron, PA XXX Pineapple Cookies 1 cup shortening 1 cup brown sugar 1 cup granulated sugar 1 cup crushed pineapple (drained) 1 cup black walnuts 2 teaspoons vanilla 2 eggs Vz teaspoon salt M> teaspoon baking soda 3 teaspoons baking powder 4 cups flour Combine all ingredients. Drop by teaspoons on greased baking sheet. Bake at 400 degrees for 10 minutes. Mrs. Clarence Buckley Liverpool, PA XXX Red Velvet Cake Cream Ms cup shortening and 1M: cups sugar. Add 2 eggs, beating well and add 2 tablespoons cocoa with 2 ounces of red food coloring, 1 teaspoon vanilla, 6 teaspoons salt. Mix well and add alternately 1 cup buttermilk with 2Ms cups flour. Fold in last 1% teaspoons baking soda and 1 tablespoon vinegar.
