The Extension specialists explain that even when the band is tight, this lid allows air to escape from the Jar during processing. This is what makes it a self scaling lid. The screw bands arc generally removed after the jars have cooled for one day. Screw bands in good con dition can be reused. But the metal lids with the sealing compound can be used only once. The Extension specialists caution con sumers to examine new v metal lids carefully before using. Check to make sure there are no gaps in the sealing compound around the edge. Jars should be of a stan dard style those used for the last several decades in home canning with the manufacturer's name on the jars. The Extension specialists do not recom mend glass mayonnaise, pickle and coffee jars because the sealing edges may not be uniform and may not seal properly. Also, these jars may not withstand the temperatures of the pressure canner. Check all jars for cracks and chips.
