A Meal
When it’s snow-atomplng
time or Just plsin cold and
gray, the meals that hit the
spot are sometimes the
easiest to make. Pancakes,
French toast, Jonny-cakes,
or hoe-cakes are Just the
thing for breakfast or dinner
on a blustery day. And
topped off with maple sirup,
they make a meal fit for a
winter festival.
In fact, maple sirup can be
used to enhance meals in
many ways. Try it as a sauce
for ice cream, puddings, and
custards or as a glaze for
ham, carrots, squash, sweet
potatoes or baked fruits. Use
it for pies or nut bars or
candy.
It might be fun to do, but
you really don’t have to tap
your own sugar maple tree in
order to serve good maple

sirup and you can use these
grades as a buying guide.
Caramel Ice Cream
y* cup sugar
Mi cup water
2 egg yolks
Mi cup sugar
Mi cup flour
cups milk
Mi teaspoon vanilla
Mi teaspoon maplene flavor
1 cup whipped cream
Heat Mi cup sugar until it is
melted. Cook 2 minutes then
add Mi cup water and stir
until sugar is dissolved. Cook
until sugar is a syrup and
spins a thread. Pour
gradually over egg yolks
that have been beaten until
light lemon colored, beating
constantly. Blend Vfc cups
sugar and flour*add milk and
cook until thickened stirring
thoroughly and frequently.
Add egg yolk mixture and
cook several minutes longer.
Cool. Stir in flavoring and
fold in whipped cream.
Freeze.

Hot Dog Surprise
2 cups chopped hot dogs
2 cups chopped ham
cup grated sharp cheese
2 hard boiled eggs chopped
3 tablespoons catsup
2 tablespoons pickle relish
graham cracker crust and
cool. Whip cream fold in
marshmallows. Spoon on
rhubarb mixture. Prepare
pudding according to
directions. Spread over

and wrap in foil. Makes Womelsdorf
about 8 buns of filling. Bake
at 350 degrees for 10 minutes.

Angel Food Cake
1 cup cake flour
1M: cups sugar, finely
granulated
IMz cups egg whites (11*12
eggs)
2 tablespoons water
Vi teaspoon salt
1 teaspoon cream of tartar
1 teaspoon vanilla or almond
extract
Sift flour and measure.
Add Vz cup sugar and sift
together three times. Beat
egg whites with rotary
beater until frothy. Add salt
and cream of tartar. Con
tinue to beat until whites
hold peaks. Slowly add
remaining sugar to beaten
whites folding it in with a
wire whisk. Add flavoring.
Then sift flour and sugar
mixture, a tablespoon or two
at a time over beaten whites.
Fold in lightly with a down
up over motion. When well
blended, pour into a large
ungreased tube pan. Bake at
350 degrees for 1 hour.

Rhubarb Torte
1 cup sugar
3 tablespoons cornstarch
4 cups sliced rhubarb
One-third cup water
few drops red food coloring
V 2 cup whipping cream
I'k cup tihy marshmallows
1-3 ounce package instant
vanilla pudding
Combine sugar and corn
starch, stir in rhubarb and
water. Cook and stir till
thickened. Reduce heat cook
two-three minutes. Add food
coloring spread on cooled
Cream Almond Cake
1 cup shortening
IMi cup sugar
, 3 cups cake flour
W teaspoori salt
2 teaspoons baking powder
1 cup milk
5 egg whites
1 teaspoon almond extract
Cream shortening. Add
sugar gradually and beat
until fluffy. Sift flour,
measure and add salt and
baking powder. Sift again.
Add sifted dry ingredients
alternately with milk and
flavoring. Beat thoroughly
after each addition. Fold in
stiffly beaten egg whites.
Pour into greased layer
pans. Bake at 350 degrees for
30 minutes. Makes 3-8 inch
layers.

1 cup boiling water
Mix together and stir well.
Add 2 cups milk beaten with
beater. Pour in freezing
tray. Let stand at room
temperature for x k hour
before serving.

DOUBLE DECKER SUPPER PIZZA
1 package (1 lb. 12 7/8 oz.)
Chef Boy-ar-dee
2 Complete Cheese Pizzas
1 lb. franks, chopped
1 1/2 cups sliced onion rings
1 1/2 cups green pepper, chopped
2 tablespoons cooking oil
Prepare pizza according to package directions except do
not add cheese. Bake each pizza 15 minutes. Saute franks,
unions and peppers in cooking oil. Remove pizzas from
oven; top with half of frank mixture and half of canned
grated cheese Remove other pizza from cookie sheet and
place on top of garnished pizza. Add remaining frank
mixture, top with cheese Return to oven and bake 8 to
10 minutes. Cut in squares.
Serves eight to ten.
