In the coming weeks we
will be interested in

favorite Easter recipes from
our readers. Also we are still
waiting to receive some
•recipes used during the
Revolutionary War period.
Citrus fruit is now in good
supply and at reasonable
prices. Why not try a
nutritious and tasty
homemade fruit salad
combining citrus fruits with
other canned fruits such as
peaches or berries.
For those readers who
have asked us - a medium
sized potato is only 90
calories although the butter
and sour cream which often
accompanies the baked
vegetable increases the total
calorie consumption greatly.

Knackwurst Skillet
Supper
6 Knackwurst
1 tablespoon oil
medium onion
cup barley
cups water
teaspoon salt
chicken bouillion cubes
2 tablespoons brown sugar
3 4 cups barbecue sauce
one-third cup green pepper
Score Knackwurst and
remove skin. Brown.
Remove from skillet. Saute
onion. Add barley water and

salt with bouillion cubes.
Add brown sugar and bar

Cook 20-30 minutes.

Cheese Pastry Buns
3 cups flour
1 cup butter
1 cup sour cream
2 tablespoons sugar
Cut butter and sugar into
flour. Mix in sour cream, stir
until mixture clings
together. Form in ball and
chill. Divide in two. On
floured surface roll out each
to measure 15 x 10. Cut in 6-5
inch squares, f ill with the
following:
1 pound cottage cheese

2 egg yolks
4 tablespoons cream
3 tablespoon sugar
1 teaspoon vanilla
Mix and divide the filling
on each square, fold over
each side and sprinkle with
sugar and bake on ungreased
cookie sheet. 375 degrees for
20 minutes.

2 cups sugar
two-third cups butter
\Vz cup sweet milk
1 cup raisins
5 cups flour
3 teaspoons baking powder
Bake in one pan or 2 small
pans. Bake at 350 degrees.

1 cup shortening
\ x i cups sugar
2 eggs
2 teaspoons vanilla
1 cup sour cream
5 cups flour
2 teaspoons baking powder
1 teaspoon soda
11/*I 1 /* teaspoon salt
Dissolve soda in sour
cream. Drop and press flat
with bottom of glass dipped
in sugar. Bake at 375
degrees.
4 cups puffed rice or puffed
wheat cereal
4 tablespoons butter
two-third cups sugar
Melt butter and sugar in
saucepan. Cook this mixture
over low heat until it begins
to turn brown (caramel
like). Add cereal and stir
well. Remove from heat and
pour into buttered pan 9x9
inch and let harden.

Raisin Spice Cake
2Vz cups flour
1 cup granulated sugar
3 4 cup brown sugar
1 teaspoon baking powder
1 teaspoon soda
1 teaspoon salt
1 teaspoon cinnamon
% teaspoon allspice
Vz teaspoon cloves
x /2 teaspoon nutmeg
cups buttermilk
% cup shortening
1 cup raisins
3 eggs
Heat oven to 350 degrees.
Grease oblong or 2 - 9 inch
pans. Measure all
ingredients into large mixer
bowl. Blend % minute at low
speed and then 3 minutes at
high speed. Pour into pans
and bake oblong 40-45
minutes and layer cakes 35-
40 minutes. Cool and frost.

into balls
Mix ingredients and mix in
1 small onion chopped. Roll
into balls about 1 inch and
drop into hot fat. Allow the
balls to deep fry until brown
and crispy. Drain on paper
and serve hot.

Homemade Mince Pies
quart of raw ground beef
cup vinegar
cup wine
cup cider
quart apples (grated)
teaspoon salt
1 quart brown sugar
1 cup raisins
1 teaspoon cinnamon
l k teaspoon cloves
V* teaspoon nutmeg
1 lemon and 1 orange ground
Mix together and use about
3 cups to a pie. Cook about 10
minutes or longer and put in
jars and seal or freeze what
you don’t use. Fill an un
baked pie shell with min
cement cover with a top
crust and seal edges. Bake at
425 degrees for 15 mintues.
Reduce temperature to 375
degrees and continue to bake
for 35 minutes. Makes
delicious pies.
