This will promote uniform baking. Don't ever attempt to bake a full-skin, mature potato without puncturing the skin - it might explode. XXX Peel only a narrow strip around Irish potatoes to be boiled. The skin will then come off easily when the potatoes are cooked. XXX If your soup is too salty, cut a raw potato in half and put it in a small kettle of soup. Boil for a short time until the over-saltiness disappears. Then remove the potato. XXX Hot milk is better than cold milk for adding to potatoes to be mashed. A teaspoon of baking powder added before mashing will make them light and creamy, especially if they’re whipped briskly.
