Mrs. Charles Long of Peach Bottom sent us two, especially interesting recipes that sound rather tasty. We also received a recipe from Mrs. Ivan Hoover and for a meat ball and potatoes dish. Mrs. Hoover answered our request for household tips by sending in the following; A good remedy for cleaning hard water spots from a glass pitcher is to soak with vinegar for several hours. The pitcher will need no scouring after washing. Exotic Lime Cheese Cake Combine: 1 cup cocoanut 2 tablespoons flour 2 tablespoons melted butter Mix and press in spring form pan. Bake at 350 for 12>15 minutes. Soften 1 envelope un flavored gelatine in *4 cup cold water. Combine 3 egg yolks, % cups sugar and 3 /* cup water in a saucepan. Mrs. Charles Long Peach Bottom XXX Vegetable Chicken Pie 1 Stewing chicken cooked and boned Partially cook together in a small amount of water, 2 white potatoes quartered, 2 sweet potatoes peeled and quartered, 1 cup fresh or frozen peas, 4 carrots diced, 4 stems of celery cut in 1 inch pieces and % teaspoon saffron. Season with salt and pepper. Thicken chicken .broth as you would for gravy. Pom cooked vegetables diced chicken and gravy in casserole and slightly mix. Moisten with enough water to make crust and roll and cover casserole. Bake in moderate oven for 45 minutes. You can use left over roast chicken and gravy if you wish. Meat Balls and Potatoes 8 medium potatoes quar- tered Ms teaspoon salt Vs teaspoon tumeric spice or pinch of saffron % cup water Bring to a boil then add meatballs made of: IM> lb. hamburger, 1% teaspoon chopped onion, 1 teaspoon salt. Wilma Hurst Ephrata XXX Country-Style Apple Pic 2 cups sliced, slightly sweetened cooked apples 3 /4 cups sugar U teaspoon salt 1 teaspoon cinnamon 2 tablespoons flour 1 cup cream pastry for one crust 9-inch pie Topping >4 cup flour 2 tablespoons butter 1 1 cup brown sugar >i teaspoon cinnamon Line a 9 inch pie pan with pastry making a high fluted edge and fill with sliced apples. Combine sugar, salt, cinnamon and flour and add cream and apples in pie pan. Combine flour, butter, brown sugar and cinnamon and sprinkle over top.
