Our Junior Cooks keep
sending in numerous recipes
for cookies, cakes and
desserts as well as for meat
and casserole dishes. They
sure must like to cook or
maybe eat is a better word!
This week we are featuring
some interesting- recipes
from pickle relish to
brownies.
Pickle Relish
4 quarts pickles
1 quart onions
quart peppers
3 teaspoons salt
2 teaspoons mustard seed
2 teaspoons celery seed
1 teaspoon tumeric
2 pounds sugar
2 cups vinegar
Grind pickles, onions and
peppers. Put salt on and let
stand three hours. Drain.
Cook everything; . simmer
three minutes. Put in jars
and seal.

2 hard boiled eggs, chopped
fine
1 cup chopped celery
1 small onion, chopped
1 cup shredded carrots
Dressing:
1 cup sugar
*4 cup vinegar and cup
water
teaspoon mustard
M> tablespoon butter
2 eggs beaten
Boil this about two
minutes. Cool, then add as
much mayonnaise as needed
to taste.
Brownies
Ms cup butter
1 cup brown sugar
Ms cup nuts or coconut
3 tablespoons cocoa
1 egg
3 k cups flour
Ms teaspoon baking powder
1 k teaspoon vanilla
Mix melted butter and
sugar, then add other
ingredients. Pour into pan
and bake in 350 degree oven
for 25 minutes.
Grandma’s
Gingerbread Cake
2 cups brown sugar
a /4 cups lard
2 eggs
1 cups sour or buttermilk
2 cups sifted flour
1 teaspoon soda
1 teaspoon cinnamon
1 teaspoon vanilla
Cream sugar and vanilla,
add eggs and beat well. Add
one part milk and one part
flour and beat. Put in rest of
milk and flour in vanilla and
beat well. Bake at 350
degrees for 35 minutes or
until done.

Blonde Brownies
2-3 cups melted butter
2 cups brown sugar (firmly
packed)
2 eggs well beaten
2 teaspoons vanilla
2 cups sifted all purpose flour
1 teaspoon baking powder
teaspoon baking soda
M> teaspoon salt
1 pack 6 ounces semi-sweet
chocolate chips
1 cup chopped nuts
Set oven at 350 degrees.
Pour melted butter into a
bowl. Add brown sugar, eggs
and vanilla. Mix well. In
another bowl sift together
flour, baking powder, baking
soda and salt. Add dry
ingredients to shortening

greased BxBx2 inch pans.
Sprinkle chocolate chips
over top. Bake 20 minutes.
Cool and cut in squares.
Yields 36 squares.

Pizza Burgers
1 pound ground beef
1 small onion, chopped
1 can (8 ounces) pizza sauce
1 can mushroom soup
\b. pound American cheese,
grated
salt and pepper to taste
Hamburger buns or english
muffins
Saute ground beef and
onion till bubbly. Add soup
and pizza sauce. Cool before
adding cheese. Spread on
halves of buns. Place under
broiler until cheese is bubbly
and edges of buns are
toasted. Can be frozen before
put on buns.
Peanut Batter Cookies
Beat with rotary egg beater
in bowl:
1 egg
Beat untd smooth:
1-3 cup peanut butter
1 tablespoon soft butter
Vz teaspoon vanilla
Vb teaspoon salt
1 cup sifted 10X sugar
Stir in:
1 cup more 10X sugar
Shape mixture into tiny
balls (more 10X sugar can be
added to make balls firm
enough to shape.)
Roll ball in: % cup finely
chopped salted peanuts.
Place on waxed paper and
refrigerate until firm.
Makes about 36 candies.
