Jim was county president in 1971 and 1972, is presently a director both on the county and the state boards. He is also membership chairman in the county for 1973-1974. Eleanor was formerly on the Women’s Committee for a number of years and active on committees. They attended state convention at Camp Hill in November. Jim has been active in many organizations for several years. He was a director of the Lancaster County Ex tension Service a number of years ago, president of the Southern Lancaster County Community Fair Association a couple years and is still a director. He has been on the board of Directors of Lancaster County DHIA a few years. He is a member of the Solanco Young Fanners. He was recently elected a director of Agway for Lancaster County and has also been on the petroleum committee for some time. He is on the board of directors of the Atlantic Breeders Cooperative which meets monthly at Bedford, Pa. Eleanor has a number of hobbies. Perhaps her mam one is making ceramics. She has many in use in her home and gives them as gifts. She makes candlesticks, figurines, door stops, dishes and other interesting pieces. She loves to grow flowers both outside in summer and house plants in winter. She makes arrangements with her flowers as well as withartificial flowers, greens and candles. She also makes 3-dimensional and dried flower pictures. She en joys cooking'and gives these easy recipes to try: MEAT ’N POTATOES PIE 1 can cream of mushroom soup 1 lb. ground beef V« cup chopped onions 1 egg, slightly beaten cup fine dry bread crumbs 2 tablespoons chopped parsley teaspoon salt dash of pepper 2 cups mashed potatoes V< cup shredded cheese Mix Vz cup of the'soup, beef, onion, egg, bread crumbs and seasoning. Press firmly into 9 inch pie plate. Bake at 350 degrees for 25 minutes. Frost with potatoes. Top with remaining soup and cheese. Bake 10 minutes more. Garnish with fryed bacon if desired. Makes one 9 inch meat pie. XXX DRIED BEEF CASSEROLE 1 can of cream of mushroom soup IM> cups milk 1 cup uncooked elbow macaroni 1 cup finely cut Cheddar cheese 3 tablespoons chopped onions Va lb. dried beef, cut in bite-sizes 2 hard-cooked eggs, sliced Stir soup till creamy. Add rest of ingredients except eggs. Fold in eggs. Turn into buttered 1% qt. casserole, store in refrigerator at least 3 or 4 hours or over night. Bake at 350 degrees 1 hour, uncovered. XXX CHICKEN & BROCCOLI CASSEROLE 2 chicken breasts, cooked and cut up 2 pkgs. broccoli, cooked 2 cans cream of chicken soup Place in casserole layer of chicken and broccoli alternately. Pour over soup. Place grated cheese and buttered bread crumbs on top. Bake at 350 degrees V 2 to 3 A of an hour. XXX CORN FRITTERS 2 cups fresh com, grated 2 eggs V 4 cup flour 1 teaspoon salt V* teaspoon pepper 1 teaspoon baking powder 2 tablespoons milk Mix all Ingredients together. Melt fat In frying pan and drop com mixture by spoonfulls into hot fat. Brown on both sides. Pastry ingredients: 1 cup plus 2 tablespoons flour Vz cup butter 1- 3 oz. pkg. cream cheese Filling: 1 cup light brown sugar 2 tablespoons butter, melted 1 egg, beaten 1 teaspoons vanilla % cup chopped pecans Make in very small tins, about IVfe inch diameter. Bake at 350 degrees for 20 minutes. For a variety of tarts, fill some pastry with cherry or blueberry filling and bake.
