Make A Date With Dates
This holiday season make
a date with California dates,
using them in a variety of
festive treats. Whole dates,
date halves, pieces, or slices
add a naturally sweetened
touch to. breads, cakes
muffins, and tortes.
The use of date pieces and
slices is an important
market for California dates.
Research on date slices and
pieces for use in baking and
ready-to eat products was
funded by a federal
marketing agreement and
order program through
assessments on date han
dlers.
The marketing order
covers four varieties of dates
produced in California--
Deglet Noor, Zahidi,
Khadrawy, and Halawy. It is
administered by the
California Date Ad
ministrative Committee,
composed of growers and
handlers, which recom
mends to the Secretary of
Agriculture regulations to
apply under the order.
Dates must meet grade,

dates on band, a little
imagination and ingenuity

baked goods.
California dates can be
used in other delights as
well. Try a pumpkin-date
torte, date cake (using dates
in place of candied fruit), or
date muffins. Whatever way
you chose to use dates this
holiday season, be assured
that family, friends, and
guests will return for more.
Brown Sugar Cookies
Two-thirds cup butter or
margarine
IVz cups brown sugar firmly
packed
2 eggs unbeaten
1 teaspoon vanilla
1 tablespoon vinegar
1 cup evaporated milk
and gracious patronage,
2% cups sifted flour
1 teaspoon baking soda
Vz teaspoon salt
1 cup chopped walnuts
Cream butter and brown
sugar until light. Add eggs
and beat well. Add vanilla
and vinegar to milk. Sift dry
ingredients and add alter
nately with milk to creamed
mixture. Fold in walnuts.
Drop by teaspoonfuls about
2” apart on a gi-eased baking
sheet. Bake in moderate
oven until delicately
browned. Let cool and frost
with brown butter frosting
made from browned butter
and confectioners sugar and
garnish with nuts.

in sugar. Bake at 375
degrees.
Chewy Peanut Butter Bars
One-third cup shortening
Vi cup peanut butter
V* cup packed brown sugar
1 teaspoon vanilla
1 cup granulated sugar
2 eggs
1 cup flour
1 teaspoon baking powder
V* teaspoon salt
1 can flaked cocoanut
Cream shortening, peanut
butter, eggs and sugar. Add
vanilla. Slowly add flour,
baking powder and salt. Mix
in cocoanut if desired. Bake
at 350 degrees for 20-25
minutes or until light brown.

cookie sheets and bake in
slow oven till light tan. Roll
in powdered sugar while
warm.

1-8 ounce package cream
cheese
1 large can evaporated milk,
chilled
1 cup sugar
Dissolve gelatin in hot
water and cool. Whip chilled
milk until thick. Combine all
ingredients. Pour into crumb
crust and sprinkle top with
reserved crumbs. Chill until
firm.

dash of cinnamon and nut-

8 marshmallows
Beat eggs in a baking dish
add other ingredients in
order listed. Mix well before
and after adding milk. Bake
at 350 degrees for one hour
adding marshmallows the
last 30 minutes. Delicious hot
or cold.
